De Zwethheul - Wonders on Water
The Netherlands is a very interesting country on many levels. Gastronomy is one of them, and the Dutch chefs keep surprising even the most experienced diners with their creativity, beautiful products and authentic approach. Water is an important element in The Netherlands and that is reflected in the kitchen. Great seafood, river fish and many fruits and vegetables derive from the abundance of water.
At restaurant De Zwethheul the water is omnipresent. The best ingredients from the water enter the plates, but diners also experience the water when eating: the picturesque river 'Delftse Schie’ is located just next to the restaurant. The river is embedded slightly lower than the restaurant, so the tables in the dining room are at the same height as the water. Guest with a table at the riverside will literally be eating within arm's distance from the water. The restaurant even has a private quay and a boat. Guests who reserve the chef’s table, are invited to enjoy the aperitif and first snacks on the boat, during a relaxing trip on the river.
This stunning location is a first asset of restaurant De Zwethheul. The small village of Zweth is located at a stone's throw from Rotterdam, but bathes in tranquillity. The ideal (gastronomical) escape from the big city.
Restaurant De Zwethheul is owned and managed by Chef Patron Mario Ridder. Mario was born in Amsterdam and worked in restaurants such as De Kersentuin in Amsterdam, De Bokkedoorns in Overveen and Park Hill in Rotterdam. He has been working in De Zwethheul since 2006 and bought the restaurant in 2008. He also opened a second restaurant ‘CEO Baas van het vlees’ in Rotterdam, a modern New York brasserie where quality meat plays the main role.
The interior of De Zwethheul has seen a total transformation since Mario took over the restaurant. Space became a luxury and the restaurant now offers 50 dining seats instead of 100. Luxury is also extended to the decoration and the rest of the interior. Guests enter the restaurant in the saloon, where beautiful pictures from Marc Lagrange beautify the wall. There are three dining rooms: the main dining room, which is light, modern and luxurious; the ‘conservatory’, which offers the possibility to organise a private dinner for up to 20 guests; and ‘the chef’s table’, which is located in the kitchen. The Zwethheul also has several wine storage rooms, a lovely terrace just next to the water and a beautiful smoking room where a great collection of cigars awaits the guests.
The team of restaurant the Zwethheul consists of twelve people: six in the kitchen and six in the dining rooms. Chef Patron Mario Ridder is assisted in the cooking by Sous Chef Martijn Wetsteijn. The dining rooms are led by the experienced Maître Remko Bögemann. Sommelier Robin Overdreef is in charge of the drinks and presents an impressive wine collection on a regular wine menu or an iPad. Robin is a fan of German wines and offers excellent pairing wines with Mario’s dishes.
Chef Patron Mario Ridder cooks with (mainly) traditional ingredients and loves classic but powerful combinations. His kitchen represents class and only the best ingredients, recipes and preparations are presented on the menu. He prefers to work with local products but uses other ingredients when they are better and add value to the dish. Mario evolved into a lighter cooking style where quality is of utmost importance. Everything that is added to the dish should have an extra value in taste and quality. Mario’s interpretation of the “Paling in’t Groen” (eel with green herbs) is a good example of his traditionally based preparations, which shine in perfection with top quality ingredients. The parade of desserts demonstrates that Mario masters the art of creativity and knows how to combine traditional and exotic ingredients into amazing dishes.
De Zwethheul is an impeccable restaurant on a beautiful location in The Netherlands. Chef Patron Mario Ridder reaches culinary heights and offers his guests culinary certainty in turbulent times. A remarkable gastronomical escape in a great setting.
