It is an outdoor, covered restaurant in a unique, relaxing location with an unforgettable view. The decoration is typical Balinese and luxurious. Brown, red and white colours enhance the warm atmosphere and relaxing music sets the right mood.
Executive Chef Nic Vanderbeeken is responsible in the kitchen of restaurant Cascades. The chef hails from Belgium and started working at Cascades in 2013. In just a few years, he transformed the restaurant into one of Indonesia’s culinary hotspots. Nic gained experience in several top restaurants in Belgium, France, the United States and Vietnam. At Cascades he bundles this experience to create a unique kind of fusion cuisine, built upon a French base. The chef manages the various cuisines perfectly, offering the guests the opportunity to sample the best of what Indonesia and Europe have to offer. He always uses one ingredient as a basis (which can be European like foie gras, or Indonesian like Bumbu Bali spiced red snapper) and completes the dish with several international ingredients and creative touches. He uses the latest cooking techniques and brings ingredients in different structures to add extra layers to his dishes. Nic and his team often organise culinary events where they invite guest chefs from all over the world. This way, the chef not only puts Cascades, but also Bali, as a region on the culinary world map.
At Cascades, guests can choose dishes from the extensive à la carte menu, or between a European or Indonesian degustation menu. There is also a separate menu for hotel guests with dishes like the Thai beef salad, a Balinese satay or a luxury burger (prepared with Wagyu beef). It is also possible to order fresh lobster, served directly from the refrigerated aquarium in the restaurant. One of Nic's signature dishes is the tomato starter: marinated heirloom cherry tomatoes are combined with beetroot, basil crème, watermelon, parmesan crisps, basil sorbet, red onion, and lavender oil. A beautiful, light dish that brings a welcome refreshment in the Balinese heat. Another outstanding dish is the Tasmanian salmon, which is served as cured salmon gravlax and comes with radish, pickled cucumber, daikon cress, and wasabi crème.
The restaurant boasts one of Bali’s most impressive wine menus, offering a broad selection of European wines as well as new-world ones. The Viceroy’s general manager Anthony Syrowatka is responsible for the wine selection and also offers a pairing wine arrangement to complement the chef’s menus. The wine menu is structured according to the different grapes and offers bottles suiting a wide variety of tastes and budgets.
Cascades restaurant is a very special restaurant for many reasons. Located on a breathtaking location inside one of the world’s best hotels, this place is not only memorable for the views. Executive chef Nic Vanderbeeken does a tremendous job in the kitchen and offers delicious dishes and menus with some of Europe’s and Asia’s best flavours.
