Chateau Eza – former royalty
The history of the enchanting Èze Village spans more than 2,000 years back in history with loads of happiness and disasters over the years, and in more recent years the tiny Chateau Eza became more and more well-known.
Up until 1976 Chateau Eza was known as The Prince of Sweden’s Castle, since one of the younger sons of Swedish King Gustaf V, Prince Wilhelm of Sweden, had the property as his summer house. Today’s owner is the American Terry Giles who has assured to keep top quality all over the property’s only eleven rooms and suites and its haute cuisine restaurant.
Since 2007 the German Axel Wagner is the Executive Chef of Chateau Eza. Previously he was the Executive Chef of Georges Blanc in French Vonnas and he also assisted Georges Blanc in his endeavours in Singapore, China and Switzerland. Axel Wagner has been working at several top rated restaurants and his cooking style and techniques are still evolving, so there is probably even more and better to come from him over the next years, although his cooking is great already today and you will have several both innovative and delicious dishes under his serving.
You can choose between three different lunch and dinner tasting menus with the most extensive dinner menu at six courses and additional amuse-bouche and predessert as always when it comes to French fine dining. Typical dishes depend on which menu you choose, but the food is mostly light and fresh, so you will have a pleasant tour through the tasting menu with courses like turbot “Saumuré” with champagne sabayon and green asparagus, or the rack of lamb from the Alps of Provence with vegetables and sun ripened fruit, or “Gold Bullion” of Ecuadorian Guayaquil chocolate and Piedmont hazelnuts to mention some of the goodies you may have if you choose the most lavish tasting menu. There are impressive fine wines that can be ordered, but also a good selection of organic wines so you can easily do perfect wine pairings with whatever you order.
The young team at Chateau Eza offers a great attention to service in a smaller and cosy environment with some of the most amazing views available in the world, where you can see most parts of the French Riviera from the windows or if desired from the terraces. Chateau Eza is a perfect property to use for private happenings as well, with a decent set price for hiring the whole property with all you want included.
The panorama views together with some excellent cooking make a restaurant visit well worth the effort up to the chateau via sloping lanes and narrow alleys, up almost to the top of the Èze Village at 427 metres above sea level.
