Ciel Bleu – a view to eat

Ciel Bleu is situated in the middle of Amsterdam at the top floor of Hotel Okura. The dining room has a magnificent view over cosmopolitan Amsterdam.
Even the kitchen has a great panorama over the city which you can enjoy together with the kitchen staff if you book the chef’s table. Dining at the chef’s table is a great experience for those who want to observe and see what happens behind the scene.
Head Chef Onno Kokmeijer and his Kitchen Chef Arjan Speelman are the masters behind the food at Ciel Bleu. They have worked together for over ten years in developing the cuisine, their partnership in food is the core of the teamwork at Ciel Bleu. At the start it was classical French, but has more and more developed into a creative contemporary cooking with influences from around the world and fantasies with texture and as much as possible locally sourced. So your classical Anjou pigeon could be salt-baked and served with a Ras El Hanout sauce. A foie gras dish can have a langoustine with foie gras as a leaf, or a monocolour brown chocolate dessert will have chocolate in a multitude of textures. It is creative food with sumptuous tastes, but also with a cool design. Some dishes are like paintings, such as a tribal dish with a tattoo.
The restaurant offers a choice of set menus with matching pairings. Responsible for the wine is Head Sommelier Noël Vanwittenbergh. The list has of course the classical French but there are several innovative wines from around the world such as white Merlot from Switzerland and even some Japanese ones. They also have a non-alcoholic meny that is very well selected to match the food.
In the dining room you will be well taken care of by Restaurant Manager Pasquinel Kolk and his team who will match the pace of service to your needs.
There is not only pleasure in matching wine to food, but also knives can evoke feelings. As part of the Japanese influence there are some wonderful Japanese steak knives you can choose from. The restaurant is situated in and owned by the exclusive Japanese hotel chain Okura Hotel. The one in Amsterdam is the only Okura Hotel in Europe, so Ciel Bleu is also special for them. Some more of the Japanese influence can be seen in that several of the kitchen staff are Japanese chefs from the Okura Hotel in Tokyo.
