Hidden in the enchanting baroque district of Ragusa Ibla in Sicily you will find restaurant Duomo. Ragusa Ibla is built on a wide limestone hill between two valleys and is part of the UNESCO World Heritage site. The ancient city, located on a 300m high hill has Greek, Byzantines, Roman and Arab influences.
The authentic Ragusa Ibla is home to a wide array of baroque architecture including several stunning palaces and churches. Just behind the neoclassical dome built in 1820 you will find Chef Patron Ciccio Sultano’s palace, restaurant Duomo. This heartening gourmet haven wins the approval of the senses with a cuisine made of the millenary Sicilian culture and tradition.
The restaurant is located in the lower level of the historic Palazzo La Rocca where some scenes of the 1961 very well known film ‘Divorzio all’italiana’, directed by Pietro Germi, were filmed. The interior is classic, colourful and decorated with elegant silk wallpaper and modern artwork. The restaurant has several separate rooms, which enhance the personal experience.
The restaurant is the biggest expression of Ciccio Sultano’s vocation. The signature of the Chef is a personal interpretation of the Sicilian cuisine with a little modern twist. The Chef tells the story of his region through his cuisine. The choice of ingredients must be excellent, in order to tell guests about the country from where the products come. The service at Duomo, led by Lady of the House Gabriella Cicero, is impeccable and extremely professional.
Mediterranean fish and shellfish are very important to the Chef. In the plate, his cooking philosophy is translated into honest and pure dishes. The Chef successfully synergises excellent food with history, like the home-made Spaghettone with pesto, a salsa from carrot sauce, almonds, grouper fish carpaccio and a taratata sauce. Another highlight on Chef Ciccio’s menu is the Country Chicken from his own farm. The breast is stuffed with corn to remember what the chicken eats and the leg is glazed with soy sauce and served with a cracker of Ragusa style crunchy rice with truffle.
The Chef and his team offer the guests an interesting take on the local cuisine, combining beautiful products with modern touches. Menus have been designed to make you taste Sicily flavours with a touch of inspiration and appetising combinations. Restaurant Duomo serves a great dining experience in the historic Ragusa Ibla.
