formel B – Variety of tastes
Copenhagen might be famous for its dogmatic Nordic cuisine, but
there are other places to experience. At formel B you can taste mostly Danish seasonal cuisine with its roots in classical French cooking.
formel B has a menu that is made to explore, there is no tasting menu nor a regular à la carte. Instead there are about 20 different same-sized dishes including dessert. They have all the same price and come in starter size so you have the possibility to taste a great variety. The dishes are continuously replaced according to season. The desserts are tasty and beautiful and should not be missed, just look at the film of the sea buckthorn dessert. The ingredients are in focus and a lot is from Denmark especially the seafood.
Chef Patron is Kristian Arpe-Møller, he owns the restaurant with Rune Amgild Jochumsen. Rune spends most of his time at the sister restaurant sletten which is in Humlebæk a bit north of Copenhagen by the sea. Kristian Arpe-Møller has worked at the
famous multiple awarded Danish restaurants Kommendanten and Ensemble. In 2003 he and Rune took over formel B, then they were both quite young (22 and 23 years), but they had the drive to develop this into a top restaurant.
Martin Iuel-Brockdorff Bek has been with them since 2003, he is both Restaurant Manager and Head Sommelier. He is behind the well sized wine cellar of about 500 references. Most of the wine is French and especially with some real jewels from Burgundy. If you want to sit on top of a wine cellar, there is one table with a glass floor which is the ceiling of the wine cellar. Water is bottled at the premises.
So if you are in Copenhagen and want to discover contemporary Danish classical cuisine then formel B is worth a visit. It will offer an inspiring evening full of inspiring choices and tastes.
