The prestigious award of Meilleur Ouvrier de France is one of the finest accolades a French chef can receive. Chef Patron Jérôme Nutile won the coveted award in 2011 and his wonderful restaurant in the small southern picturesque village of Collias just gets better and better.
It is fascinating and impressive how a restaurant and hotel of this top standard can make any sort of business in a small village like Collias. The people of France share an amazing passion for fine dining so top restaurants are literally scattered all over the country. You have a bit of a drive from the closest international airport before you arrive, but whilst there you can relax and enjoy top cuisine.
We highly recommend making a reservation outside in the lush garden, weather permitting. The terrace is something really special and makes a perfect setting for an impeccable meal. The property originally was an old school building and its stone vaulted rooms now serve as an ambient setting for the concerned diner.
Chef Patron Jérôme Nutile evolved a deep passion for the gastronomy at young age. He started his culinary career at Abbaye de Sainte Croix in Salon-de-Provence. He also worked at the top rated Le Chabichou in Courchevel before he moved on to Uruguay’s Punta del Este and started to work at La Bourgogne. The time in Uruguay was good for Chef Nutile, but he moved back to France again for four years at Georges Blanc’s kitchen in Vonnas before he founded his own Hostellerie Le Castellas.
Chef Patron Jérôme Nutile has really what it takes to deliver you a both sophisticated and balanced cuisine made by someone who is prepared to offer you something extra. Hostellerie Le Castellas is an experience not to be missed.
