Inter Scaldes – finer things in life
Inter Scaldes has been a landmark on the Dutch culinary map for many years now. The restaurant is the perfect enhancement to all finer things in life. Chef Patron Jannis Brevet and his wife Claudia know everything worth knowing about hospitality so you will feel like coming home when you check in at their hotel and stay for a wonderful dinner.
You will find Inter Scaldes just outside the small town of Kruiningen at the countryside of the Dutch Zeeland. The main restaurant building was built in 1927 by a veterinarian and he lived at the property until 1953. After that, the building was used to house the Royal Marechaussee until 1968 when it was turned into a restaurant by Chef Patron Maartje en Kees Boudeling. Inter Scaldes became a well-known restaurant destination and one of the most famous restaurants in The Netherlands. The accolades kept on coming and in 2001 the business was taken over by the present Chef Patron Jannis Brevet.
Chef Brevet was born and raised in the Zeeland region and knows inside out its many ingredients from both land and sea. There are numerous amazing produce like the delicious blue lobster of absolute top class in the world. Following the start of Brevet’s gastronomic career in Zeeland he moved on to an apprenticeship at the famous German restaurant Tantris in Münich. Jannis worked for several years in Germany at restaurants like Schweizer Stuben in Wertheim-Bettingen and Le Marron in Bonn. The Chef finally moved back to The Netherlands and continued his successful career at Dutch restaurants like Chagall and the ‘t Koetshuis before he got married with his Claudia and settled down at their Inter Scaldes. Jannis as the Chef and Claudia as the Lady of the House. Follows a lot of hard work and they live in the same house as the restaurant so the devotion and dedication is second to none.
Jannis Brevet’s cooking is based on the French haute cuisine, but the Chef has developed his own style and uses mainly products from the Zeeland region. Brevet is as precise as a Swiss watch so you can expect perfection in every dish. It can take Jannis years to develop a new dish so perfection is the word that comes to mind when you have dishes like the king crab with sea salt, cloves and broccoli, the lemon sole with burned mustard, turnip, Kombu & Dai Dai Ponzu or the lobster with artichoke, pistachio, orange blossom and truffle to just mention some of the many creations from the kitchen.
The team surrounding Claudia and Jannis has worked with them for many years including the Head Chef Paul de Groote who has worked with the owners for more than ten years. It is no surprise considering the winning formula used by Claudia and Jannis who simply offer you the best of Zeeland.
