Le Saint-James – wonderful views
Close to the city of Bordeaux you will find the picturesque little village of Bouliac, and in the centre of it you will find the property of Le Saint-James. A design hotel and gourmet restaurant among other things designed by architect Jean Nouvel in 1989 and owned by the Borgel family since 1993.
Despite the fact that the hotel and restaurant were designed more than 20 years ago it still feels contemporary and up-to-date. You will soon find yourself at home so why not start with a drink in the bar before proceeding into the main dining room for some serious indulgence?
Patron Jean-Claude Borgel hired Michel Portos as his Head Chef back in 2002. Michel did wonders with the restaurant and took its culinary concept into new heights, but his Marseillan roots and strive for something of his own has brought him to the decision to leave Le Saint-James for new challenges. From September 2012 he will run his own brasserie in Marseille and the new Head Chef of Le Saint-James is Nicolas Magie. Chef Magie trained with several chefs in the Aquitaine region, like Michel Gautier and Denis Franc before he moved on to Hôtel de Crillon to work with the acclaimed Chef Christian Constant. In 1999 Nicolas Magie opened his own restaurant called La Cape and the restaurant still operates in Cenon, despite the fact that the former Chef Patron has left for Le Saint-James.
Michel Portos’ inventive cuisine was a bit on the spicy side which comes as a warm welcome and feels fresh on the French culinary scene. Hopefully Nicolas Magie will keep the essence of Portos’ cooking, but rest assured that there will be changes as well, as always when chef changes.
The atmosphere at Le Saint-James is something extra and the views of the wine plants and the landscape of Bordeaux outside the windows are so appealing that a reservation is almost worth it just thanks to the views.
