Les Amis – haute cuisine in Singapore
There were not many good French restaurants in Singapore in the early 1990s, but that was changed 1994 when Les Amis was opened at the Shaw Centre. Les Amis quickly became popular in Singapore and more and more recognised and it did not take long before the restaurant was talked about abroad as well.
The huge success of Les Amis opened up new opportunities and today the Les Amis Group has grown into 15 restaurants in Singapore and China together with other well-known restaurants such as Cépage in Hong Kong as well.
The mainly French wine list of Les Amis is excellent and there is nothing you will miss when you have any of the delicacies, like the sturgeon and blinis or the signature smoked eel “tiède” with horseradish, Dijon mustard emulsion and pork crouton. The cuisine is not only French, no; it is rather European with classic cooking techniques, but with Asian ingredients as well.
Head Chef Armin Leitgeb left in 2012 and the Les Amis group's Executive Chef Galvin Lim has taken over the reins. The Chef believes in less is more and it is obvious when you have food cooked to absolute perfection combined with the outstanding wine choices. The Director of Wines Timothy Goh is in charge of the wine selections of the whole Les Amis Group, but the Director of Group Operations Randy See is a huge wine connoisseur as well with the biggest possible wine passion to be found so of course he is involved in the fine wines offered as well.
The team of Les Amis has the perfect set-up and the restaurant’s future is secured as one of the best French alternatives in Singapore. The competition of restaurants is fierce, but the Singaporeans and everyone else have a true gem in Les Amis.
