Consistency is just as important as having the best ingredients or the best chef. The best restaurants are the ones that evening after evening, year after year, continue to deliver absolute top class dishes. Of course a restaurant can have a bad day, but that day can never be allowed to be too bad. Smaller ups and downs are ok for all top restaurants, but not more than that. Lung King Heen is a perfect example of a restaurant which manages to almost always deliver the best thinkable final result.
Lung King Heen is located inside the Four Seasons Hotel Hong Kong in the heart of the Hong Kong Island and is the establishment’s flagship Cantonese Chinese cuisine restaurant. The restaurant is headed by Executive Chinese Chef Chan Yan-tak. It was a lucky hit when the Four Seasons managed to convince the retired Chef to get back into business. Chan Yan-tak had quit working as a chef and planned an early retirement as a home dad taking care of his daughter, but the management at Four Season’s wanted something else and the heavily experienced Chef was back in the business again in 2002. Yan-tak was born on Kowloon and has spent his entire life in Hong Kong. It was not his initial goal to become a master chef and he started in the kitchen solely due to economic necessity, but eventually he discovered his passion and today he is one of the leading sources when it comes to Chinese cuisine.
Chef Chan worked 16 years at Lai Ching Heen at the Regent Hotel (formerly a Four Seasons Hotel) before he started the Lung King Heen or View of the Dragon as it means. Several of his present 23 kitchen staff members also worked with him at the Regent Hotel. Chan Yan-tak’s cuisine has been more refined over recent years and he does not close any doors to European touches as well, with ingredients not normally found in the traditional Cantonese cuisine. You will of course recognise the Chef’s work as mainly Chinese with an amazing range of dim sum which will take care of your taste buds no matter what references you might have. Dim sum for lunch, but for dinner you must have at least one of the Chef’s crab dishes which are amongst the absolute best in the world. The braised fresh bamboo piths with fresh crab meat is fantastic.
Lung King Heen is no doubt one of the best Cantonese Chinese cuisine restaurants in the world and a must for all who appreciate a great meal regardless of which cuisine you are used to.
