Amador – the radical artistic cuisine
Chef Patron Juan Amador is not someone you easily can label. His progressive, creative and avant-garde style of cooking is something which will fascinate you as well as make your taste buds happy. Yes, Amador’s cuisine is contemporary and will challenge you, but it is delicious and something you eat and enjoy.
Juan Amador was born in 1968 in Waiblingen close to Frankfurt. His parents are from Spain so he was born into both the German and Spanish cultures which have proven to be a perfect combination. Amador’s cuisine is something personal, an experience offered by a chef with integrity and skills far beyond the standard. A lot of the cooking is executed with the latest kitchen techniques and is experimental on several occasions, but the foundation of the multi-cultural cuisine is of French origin. But you can rest assured that Amador is not a traditional haute cuisine restaurant. In addition to several Asian influences, you will also find dishes which clearly flirt with the Basque Country and the Catalan region of Spain.
Tapas and snacks of iced beurre blanc, malt bread, hazelnut milk and caviar, or duck liver, smoked eel, Granny Smith apple and wood charcoal scented oil are good examples of what you can expect to start your wonderful journey with into the Amador universe. There are delicious signature dishes like the “Back to the roots” with pigeon, mango, coconut and purple curry, but most of the menu is seasonal changed with creations like the “Brick in the wall” with spiced milk, salted caramel, yoghurt and beetroot.
Chef Patron Juan Amador is confident and does his own thing without taking notice of what other restaurants are up to. His integrity and culinary bravery affects his whole team which offers you a rare experience to always look forward to. The wine pairings are are really nice as well and in addition to them you will occasionally have some sake.
The setting of Amador is unique. You arrive at a suburbian area of low-end discount shops which is far from the typical environment of a luxurious restaurant, but you will understand eventually after entering the artistic world of Amador which will give you countless impressions both for your body and soul.
