Restaurant Meliefste is a cosy gastronomical restaurant in the picturesque town of Wolphaartsdijk in The Netherlands. Wolphaartsdijk is located in the province Zeeland and known as a popular holiday destination. Many tourists and locals enjoy walking, sports and water sport possibilities at the famous lake "Veerse Meer". The sea is just a few kilometres away.
Meliefste is located in a beautiful historical building at the marina side. The restaurant is housed in the original ‘Veerhuis’ in the yacht club, which got a full renovation. Guests will discover a stylish interior that is divided into three dining areas, of which two inside and an outside terrace. Recently the kitchen was extended and fully renovated to the latest modern standards. Through a huge window, the chefs are visible during service which brings extra dynamics in the main dining rooms. The decoration mixes authentic, classic elements and refined modern details. The small summer terrace has views over the harbour side of the Veerse Meer.
The restaurant has undergone a true metamorphosis and today it is a place where passion, knowledge and love for the kitchen go hand in hand. Chef Thijs Meliefste is a great chef who is always looking for new dishes and evolution in his cooking style. The chef’s cooking art is pure and reflects the beautiful nature surroundings. Together with his kitchen team, Thijs goes foraging in the surrounding fields for wild herbs and plants on a daily basis. It is evident that the surroundings and seasons play an important role in the kitchen of restaurant Meliefste.
Thijs Meliefste was formerly the Sous Chef of restaurant Katseveer in Wilhelminadorp, also located in Zeeland. Before that, he gained experience in restaurant Het Gebaar in Antwerp, and attended an internship at restaurant The Fat Duck in London. He met his wife Anuschka (who is the lady of the house and co-owner at Meliefste) in restaurant Het Gebaar and today they are creating gastronomical experiences together in Wolphaartsdijk. Sommelier Geert Rutte, who previously worked at De Karmeliet in Bruges, knows how to impress with a fairly small wine cellar. His pairings are creative and spot on, combining classical and natural wines. Alternatively, a delicious juice pairing is also available. Restaurant Manager Steven van Roemburg will assist the guests with a smooth and professional service.
The menu of restaurant Meliefste is a reflection of the nature and the Zeeland environment. Special plants, vegetables from the area, fresh fish from the Oosterschelde, or meat from the surrounding villages: the respect for the product is always essential. The team works with the finest and best local produce, freshly delivered every day. Always products with a story and ingredients that are treated with care. Lobster from the Oosterschelde is freshly prepared with slices of white asparagus, radish and vinaigrette of radish. Locally grown lamb from the farm in the village is served as filet and part of the shank. The meat is slowly cooked and served with peas, garlic and corn polenta. The product-driven philosophy prevails and often dishes only exist out of a few ingredients besides the beautiful main product.

In his restaurant Meliefste, he offers top gastronomy with a strong focus on the nature and what it offers at the given season.
