Restaurant Frantzén – Nordic eco
There are only 19 seats and a bar counter in Chef Patron Björn Frantzén’s small intimate restaurant in Gamla Stan in Stockholm. It is cosy, but not private so talk quietly if you do not want your surrounding guests to hear you. But who needs talking when there is so much greatness served at Restaurant Frantzén?
Restaurant Frantzén opened in 2008 and is one of the best examples of Nordic cuisine made with culinary intelligence and integrity few others can match. Björn Frantzén worked at nationally famous Edsbacka krog, before deciding on opening his own restaurant which has been pure success and the restaurant just gets better and better for every year.
You will have a 100 percent eco experience when you dine through the French influenced tasting menu with strong Nordic emphasis. There is only one set menu and upon arrival you are offered only a list of today’s ingredients. What is created from the ingredients is presented to you over the course of your dinner. The concept works very well, indeed. Since the restaurant is so small the element of surprise of the assembled menu can be lost. So if you want to be pleasantly surprised try not to look at any other table than your own and you are in for a treat. Uniquely, Restaurant Frantzén has no wine list, instead the sommelier and the restaurant manager have prepared a matching beverage pairing.
Recommended if you want to get close to the action is to book one of the four counter seats. It not only allows you to study what is happening in the kitchen, but also gives you the opportunity to learn and discuss with the cooks.
Björn Frantzén belongs to the fresh wave of Nordic star chefs offering top international dining with strong focus on the nature and what it offers at the given season, and with a lovely intelligent twist. Restaurant Frantzén is a must when you are visiting Stockholm.
