SPOON by Alain Ducasse in Hong Kong is certainly one of the most successful expansions of a master chef’s vision.
You can forget about SPOON by Alain Ducasse, to be a restaurant copied and controlled from abroad. No, this gem located on the Kowloon peninsula has its own integrity and style and offers you a laid-back experience with impeccable haute cuisine. The restaurant is based on classic French, but has evolved and become contemporary with a twist. The formal style seen in many French dining temples is gone and replaced by an ambience more reminiscent of a lavish lounge. It is enjoyable and a great pleasure how casual-chic a fine dining experience at this level actually can be without losing the spark or the quality awareness.
Executive Chef Philippe Duc comes from Royan not far from Bordeaux in France. Chef Duc has culinary training both as a traditional chef and a pastry chef so he knows both disciplines well. He started to work for the ALAIN DUCASSE Entreprise already in 1999 so he has been loyal to the Grand Chef and Restaurateur for many years and worked at several of his most prominent restaurants. In addition, Philippe Duc has also worked a couple of years at Les Ambassadeurs in Paris at Hôtel de Crillon.
Chef Philippe Duc is certainly one of the most valuable assets of SPOON by Alain Ducasse, but the whole team shines of great talents and skills. Pastry Chef Yannick Oppermann delivers some outstanding desserts and Chief Sommelier Nicolas Deneux implements unconventional thinking and approach to the many times too conservative and strict wine offerings at haute cuisine restaurants. The wine cellar is the first thing you see when you enter the restaurant since its impressive around 6,000 bottles with 650 different vintages are on display in glass cabinets for you to desire for. Of course there are the standard exclusive wines from France, but there are also many interesting and very tasteful selections from Greece, New Zealand and Lebanon to just mention a few.
