Swedish Taste – playful and tasteful
Swedish Taste is situated in Gothenburg, the second largest city in Sweden. Gothenburg is a harbour town renowned for its seafood and boat life. Swedish Taste is a perfect spot to savour both, as it is situated with a view over the harbour and the opera house, designed to give the sensations of ships and seagulls wings.
The restaurant is run by Chef Patron Magnus Lindström since 2000. Magnus is an experienced chef who among his merits has an Olympic culinary medal. He still does service and is very active in the menu and is assisted in the kitchen by Head Chef Kristoffer Svanström.
Together Magnus and Kristoffer want to create food that is fun, playful, not too serious, which hopefully will put a smile on the guest’s face. The food is grounded mainly on Swedish ingredients and seasonal. You will always find some tasteful fish courses, which is a must to enjoy when you are in Göteborg. The food is playful in having a lot of tastes on the plate, or just playing, such as making a flatfish tall, appetisers in small taco shells or stone tiles as plates. Some plates are so playful in composition and ingredients that you need to focus. The kitchen might consider that sometimes a little less can be more. You have a choice of either à la carte or a four, six or eight course menu. To the menu there is a wine menu or rather drinks menu. Sommelier Stian Maylann also likes to play and will sometimes serve a beer instead of wine. The accompanying wines are fun and diverse and will give you a taste of a variety of wines from all around the world.
The interior is fresh, modern and playful in its choice of colours, lamps and decorations. The main room has a nice airy feel with a high ceiling, large windows and a nice view into the kitchen. There are some fun details, such as a stool for ladies bags which you sometimes find in more formal places but here it is more for play and surprise.
There is also a lot more to Swedish Taste than just fine dining, it is in a way a food playground as it has a little delicatessen where you also can buy take away and a food studio where they arrange fine dining cooking classes. Swedish Taste is also open for lunch, when you can enjoy both simpler food but also a smaller tasting menu. And for those who want something more there is a walking dinner where, between an appetiser and main course, you have a guided walk of the town. How is that for playing with food!
