Biko – Basque recipes in Mexico


Biko is located at one of the most famous streets of Mexico City and the restaurant has become wellknown as one of the best in Mexico. wbpstars.com is prepared to push it further than so – Biko is brilliant and one of the best restaurants in the world.

Biko is owned by the two chefs Bruno Oteiza and Mikel Alonso. Bruno Oteiza was born in 1970 in San Sebastián, Spain, a year before Mikel Alonso was born in Biarritz, France. Both of them are born and raised in Basque country and share the Basque identity which is typical for that part of the world and has resulted in some of the best chefs in the world. Considered their skills it is no big surprises that legendary chef Juan Mari Arzak has been among those who have trained and inspired them.

Bruno Oteiza and Mikel Alonso baptized their restaurant Biko which derives from bikote, which means couple in Basque language. The two chefs are very different and complement each other perfectly and that has resulted in intelligent and varied Basque cooking techniques with Mexican ingredients. A good example is the use of the sugar from the agave plant (that is usually used for tequila) in some of the desserts instead of honey. It is delicious and offers a different sweetness and fruitness in the taste that you have not experienced before.

Biko is so much the friendship and perfect balance between Bruno Oteiza and Mikel Alonso and the decade they have spent together shows clearly in their cuisine that will not disappoint anyone. The flavours of mostly Mexican produce are perfect for your taste buds and the presentations of the dishes are wonderful to just sit and watch.

Biko is featuring one theme on a split menu, where one side offers traditional dishes and the other boasts modern interpretations using more molecular gastronomy and contemporary style. The price tag might be hefty compared to other restaurants in Mexico City, but on an international level it is very good value for money. You can easily dine two persons for 250 dollars and you will have good wine included in that.
