Severins Resort & Spa Öschberghof
Donaueschingen
Set in the gently rolling countryside of the Black Forest near Donaueschingen, Severins Resort & Spa Öschberghof is a contemporary luxury resort defined by its strong focus on golf, gastronomy and wellness. The resort is built around one of Germany’s most prominent golf destinations, making it a natural choice for both dedicated golfers and guests seeking an active retreat in nature. Alongside its sporting identity, Severins Resort & Spa Öschberghof has developed into a full-scale lifestyle resort, with extensive wellness facilities, multiple dining concepts and a modern architectural language. Dining at the two Michelin-star ÖSCH NOIR is a clear highlight.
Location & Hotel
Located just outside the town of Donaueschingen, Der Öschberghof enjoys a quiet countryside setting in the southern Black Forest region. The hotel is easily accessible by car and lies around 1.5 hours from Zurich and approximately 1 hour from Freiburg im Breisgau, making it a convenient escape for both German and international guests.
The property is set across extensive grounds dominated by one of Germany’s leading golf facilities, with 45 holes spread across different courses. The landscape is open rather than forest-dense, giving the hotel a bright and airy feel with long views over the greens. Surrounded by expansive fairways and greenery, the hotel offers a calm, open setting that feels both spacious and well-organised.
Architecturally, Der Öschberghof blends a modern main building with a separate Dependance. The main building, renovated and expanded in recent years, offers a contemporary and upscale feel with clean lines, natural materials and generous use of glass, with many rooms overlooking the golf course. The Dependance features a more classic style, with rooms and suites that offer a slightly different level of finish and outlook, and is also where dogs are welcome.
Both indoors and outdoors, the hotel feels expansive, with wide corridors, open views and large communal areas. The clientele is mixed and relatively diverse, including couples, families with children and a somewhat younger crowd than one might expect in a traditional luxury resort. Public areas are spacious and well-designed, though at times they lean slightly towards a business hotel atmosphere, particularly around the conference spaces. That said, the overall impression remains polished and efficient, with a clear focus on comfort and functionality.
Rooms & Suites
Der Öschberghof offers a clearly structured range of rooms and suites, divided between the main building (newer) and the Dependance (dog friendly).
Main building:
- Comfort Main (≈ 24 m²): Compact but well-designed entry-level rooms, offering modern finishes and a clean, contemporary feel.
- Premium / Deluxe / Deluxe South (≈ 36 m²): Spacious rooms with refined materials, comfortable layouts and modern bathrooms. The Deluxe South rooms benefit from particularly bright orientations and pleasant views.
- Junior Suite (≈ 51 m²): A noticeable step up in space, with integrated living areas and a more relaxed layout, ideal for longer stays.
- Suite (≈ 52 m²): Separate living and sleeping areas, offering additional comfort and privacy in a modern setting.
- Öschberghof Suite (≈ 62 m²): The top category in the main building, combining generous space with the most refined finishes and overall comfort.
Dependance (approx. 1-minute walk):
- Comfort Dependance (≈ 32 m²): Larger in size than entry-level main building rooms, with a more classic design and a slightly different level of finish.
- Suite Dependance (≈ 48 m²): Spacious and practical, offering generous layouts with a more traditional style.
Our stay
During our stay in a suite in the Dependance, the space felt generous, yet elements such as the bathroom and especially the windows felt less contemporary compared to the main building. The suite also featured a large bathroom with both bath and shower, a private terrace and a complimentary minibar, adding to the overall comfort of the stay. For guests prioritising design and overall luxury, the main building is the preferred choice. The Dependance does, however, serve a clear purpose, as it accommodates guests travelling with dogs.
Gastronomy
Der Öschberghof offers a broad and well-structured culinary landscape, ranging from fine dining to both international and regional concepts:
- ÖSCH NOIR: The hotel’s two Michelin-starred fine dining restaurant under chef Manuel Ulrich, offering modern French-inspired cuisine at a very high level with a strong focus on precision, balance and technique. The tasting menu is delivered with exceptional attention to detail and service. Example dishes include hand dived scallop with lemongrass foam, fermented carrot and tamarind, and Imperial pigeon with rice vinegar jus, kimchi and plum. The wine list and selections, managed by Michael Häni, are truly impressive.
- ESSZIMMER: The main restaurant and breakfast venue, featuring an extensive breakfast buffet and an evening à la carte and menu offering with international and seasonal cuisine in a bright, golf-course-facing setting. In the evening, the focus is on accessible fine dining with a relaxed atmosphere. Example dishes include roasted sea bass with seasonal vegetables and herb butter sauce.
- HEXENWEIHER – Ristorante & Pizzeria: A relaxed Italian concept serving classic Italian dishes and pizza in a casual atmosphere. The setting is informal and family-friendly, making it a popular choice for a lighter evening. Example dishes include freshly baked pizza margherita with San Marzano tomatoes and buffalo mozzarella.
- ÖVENTHÜTTE: A rustic alpine-style restaurant located a 10-minute walk from the main building, with free shuttle available. Offering hearty regional and comfort dishes in a cosy hut setting, popular for more relaxed evenings. It has a warm, mountain-inspired atmosphere that contrasts with the main hotel. Example dishes include traditional veal schnitzel with potato salad and lingonberries.
- TANÖSHI: The Japanese dining concept focusing on sushi and Japanese specialities, bringing an Asian culinary dimension to the resort. The menu is centred around accessibility and precision with a sushi-led offering. Example dishes include assorted nigiri selection and miso-glazed black cod.
- Bar & Tagesbar / Önothek / Vital Bar: Several bar concepts throughout the property, ranging from classic cocktails and lounge drinks to an extensive wine selection and more wellness-oriented offerings in the spa area. The wine programme is particularly strong, offering both by-the-glass selections and rare bottles. Example serves include signature cocktails and seasonal spritz variations.
Overall, the culinary offering is notably diverse, with ÖSCH NOIR as the clear fine dining highlight, while ESSZIMMER and the more casual concepts ensure strong variety throughout a stay.
Hotel Assets
- Der Öschberghof offers a comprehensive range of facilities centred around golf, wellness and relaxation:
- The 45 hole golf complex is one of the hotel’s defining features and a major draw for both amateur and experienced players. The courses are well maintained, varied in layout and designed to offer a balanced playing experience across different skill levels, making the resort a true golf destination in its own right. The golf facilities are complemented by a fully equipped pro shop, practice areas and a modern golf simulator, allowing guests to train and refine their game year round, even in less favourable weather conditions.
- The spa and wellness area spans over 5,000 m² and includes multiple indoor and outdoor pools, a wide selection of saunas, extensive relaxation areas and treatment rooms. The facilities are modern and comprehensive, with a strong focus on both recovery and relaxation. However, the spa is also accessible to external day guests, which can make it feel quite busy, particularly during weekends and peak periods, and slightly less exclusive at certain times.
- A modern fitness centre and a broad range of additional sports facilities support active stays beyond golf, offering guests further options for training, movement and recovery throughout their stay.
- The hotel also caters well to families, with children present throughout the property and a generally welcoming atmosphere.
- Conference and event facilities are substantial, reinforcing the hotel’s appeal for corporate stays, which contributes to the slightly business-like feel in certain areas.
