Henrique Sá Pessoa is a renowned Portugese Chef and ALMA is one of his many projects. Henrique is a driven chef who has always sought to gain more knowledge, the latest cooking techniques and expertise from all over the world. To gain that experience, the chef worked in famous gourmet temples like El Celler de Can Roca in Spain and Tippling Club in Signapore.
Henrique Sá Pessoa opened his first restaurant ALMA in 2009 but closed its doors in 2014. The restaurant relocated and opened again in 2015 in the Chiado district of Lisbon. Today it is housed in a beautiful 18 century house. The interior is relaxed and sleek and manages to balance both a laid-back and elegant backdrop for your dining pleasure. If you want to enjoy Henrique Sá Pessoa cuisine at its best – ALMA is definitely the place to go.
The restaurant is open for both lunch and dinner and you can either go a la carte or enjoy one of the many different seasonal signature menus. As Lisbon is nearby the sea there is a great selection of delicious seafood, too.
At ALMA, owner and Chef Henrique Sá Pessoa combines his long experience of cooking with his international experiences and his Portuguese roots. The result is a unique cuisine that joins traditional elements with more contemporary international flavours. For Henrique Sá Pessoa, there is only the good cuisine and the bad cuisine. He defines his as a tasteful cuisine: refined taste, perfect technique and excellent product. The basis of his culinary philosophy is in his influences and references, like his travels around the world, his passion for Asia, his knowledge of traditional Portuguese cuisine and the life in Lisboa.
All these influences come together in innovative servings at his restaurant ALMA. Examples of his cooking style include the roasted octopus with romesco salsa, potato skin, capers and smoked paprika. Or the signature dish: “Cobblestreet”, which is a creative version of salted cod, served with onion puree and egg yolk. If there’s still room for dessert, make sure to the Caramelized Granny Smith apple tart with grapefruit and vanilla sorbet.
Portugal has a wide and interesting selection of wines. At restaurant ALMA, Sommelier Gonçalo Patraquim offers an extensive wine menu with many of these great wines on display. A big bonus is that many of the wines are also available by the glass.
ALMA means soul in Portuguese and that is in fact a good summary of what one might expect at restaurant ALMA. A soulful cuisine, where Chef Henrique Sá Pessoa creatively combines international influences with his Portuguese roots.
