Location & Interior
Set within the luxurious haven of Canaves Oia Epitome, Elements enjoys a privileged position overlooking the endless blue of the Aegean Sea. Elements Restaurant is designed as a living extension of the island itself. Volcanic stone, warm woods, soft earth tones, and Cycladic white surfaces blend seamlessly into a semi-outdoor layout that welcomes both breeze and light. The boundaries between interior and exterior dissolve, allowing guests to dine immersed in the vastness of sea and sky.
By day, sunlight dances across textured walls and water features; by evening, candlelight and sunset hues transform the space into something intimate and cinematic. The infinity pool mirrors the sky in shifting tones of gold and violet, creating a dreamlike backdrop that feels almost unreal.
At the heart of the restaurant stands a sculptural bar, a gathering point where signature cocktails infused with herbs, citrus, and premium spirits set the tone for the evening ahead. Each sip is a gentle introduction to the elegance and creativity that define the Elements experience.
The Chef & the Team
Guiding the gastronomic vision is Executive Chef Tasos Stefatos, a culinary artist whose life and career reflect a deep devotion to authenticity, craftsmanship, and emotional connection through food. Born and raised on the island of Kefalonia in the Ionian Sea, Stefatos grew up surrounded by the raw beauty of nature — the scent of wild herbs, the rhythm of the sea, and the generosity of the land. These early impressions shaped his philosophy long before formal training ever began.
Over the years, he refined his technique in some of the world’s most celebrated kitchens, gaining an international perspective while staying rooted in Greek culinary identity. His global experience includes prestigious restaurants such as Vendôme, Martín Berasategui, and Atera.
Back in Greece, his rise through the country’s most acclaimed gastronomic institutions further shaped his mastery. He has worked as chef de partie at Spondi and Pil Poul, as sous-chef at Hytra, and later as chef de cuisine at Hytra, Blue Hytra, and Botrinis — each holding Michelin recognition during his tenure. For the past five years, Chef Stefatos has served as Executive Chef of the Canaves Oia luxury boutique hotels and resorts, shaping the culinary identity of Elements into one of Santorini’s most celebrated gastronomic experiences.

At the core of Chef Stefatos’ cooking lies a profound respect for raw ingredients and natural flavour. “In order to understand, you must go back,” he often reflects — back to the earth, the smells, the seasons, and the simplicity that nature offers so generously.
His cuisine seeks to preserve authenticity in every form: extracting the very best from each ingredient without masking its essence. Complexity comes not from excess, but from balance, texture, and emotional resonance. Every dish is designed to express purity — a clear voice of land or sea translated into refined contemporary gastronomy.
One of his greatest ambitions is to elevate Greek cuisine onto the world’s highest culinary stage — showcasing its richness, diversity, and depth with the respect it truly deserves.
