He launched the Ying restaurant at the nearby located Altira Macau before he was included in the launching team of Jade Dragon. Chef Tam has more than 30 years of experience in Cantonese fine dining and has worked in Greater China as well as in Hong Kong and in Thailand, where he was the Chinese Executive Chef at the Peninsula Hotel in Bangkok and its Mei Jiang Cantonese restaurant for more than nine years. Tam Kwok Fung has an amazing ability and understanding of how to select the very best produce combined both with a deep understanding of traditional Chinese cuisine and its culinary techniques as well as a perfect sense of balance and present cooking. The Chef’s cuisine offers some of the most delicious Chinese cuisine in the world, and with a wide variety of both style and innovation, but also an intelligent touch of and thinking of your body’s balance, longevity and health.

The cuisine is mainly based upon the Chinese Cantonese kitchen, but you will have dishes influenced from all over China as well as ingredients from far beyond the borders of Zhōngguó. Some of the many essential orders on the menu are Chef Tam’s signature dishes, like the double-boiled cordycreps with fish maw, the steamed Japanese hairy crabmeat dumpling, the wood roasted chicken, the Macau sole, the stir-fried prawns with lobster bisque, and the braised vegetable with fish maw, azuaga ham and winter melon in beet root chicken broth to just mention some of the delicacies.
