Restaurant La Villa in the Sky is a remarkable fine-dining restaurant in the centre of Belgium’s capital Brussels. It is located more than 120 metres up in the air at the 26th floor of the IT tower, a famous landmark in Brussels. Yes indeed, the name – La Villa in the Sky – says it all. Guests are welcomed by a hostess on the ground floor, who will accompany you to the 24th floor. The last two staircases are done by foot, but what a reward you will get afterwards. On the 26th floor, the door to the Villa opens and guests are welcomed by a dazzling view on the city – day and night.
No more than 24 guests per service can enjoy a wonderful fine-dining experience while enjoying some of the best views one can have on the city of Brussels. The rooftop restaurant is entirely made out of glass and steel and floor to ceiling windows offer breath-taking views from every table in the restaurant. The interior itself is stripped down in order to draw the focus to two things: the stunning views and the amazing food. The glass cube where the restaurant is housed, offers round tables and comfortable seats, combined with black colours and leather tablecloths. No more is needed here to set the exceptional atmosphere. At the backside of the restaurant, another spectacle unfolds during the meal: the work in the open kitchen. Outside, there is a big terrace, too, to enjoy even more great views on the city.
La Villa in the Sky is the work of Chef Alexandre Dionisio and famous hospitality investor Serge Litvine. After the success of previous pop-up restaurant C Expérience, the duo decided to open a permanent restaurant on this stunning location in 2014. Chef Alexandre Dionisio’s culinary track record is quite impressive to say the least. At the age of 15, the young chef started working in the kitchen of the Passage where he learned the classic French basics. In 2003, Alexandre started at the famous Comme Chez Soi in Brussels where he specialised in the best meat, game and sauces. In 2008, he moved to yet another famous restaurant in Brussels: Sea Grill from Yves Mattagne. Before opening La Villa in the Sky, the Chef also managed his very first own restaurant Alexandre. In 2010, the chef made it to the semi-final of the famous television show Top Chef, and in 2013, Gault&Millau Belgium named Alexandre ‘best young chef in Brussels’.
At La Villa in the Sky, Alexandre Dionisio combines his experience into a cuisine which he describes as “classic with a twist that is influenced by his Spanish origins”. In his preparations, Alexandre always starts from simple products, which he elevates by focusing on the best parts of the ingredient. A good example is the starter with octopus, of which he only uses the crispy end of the tentacle, with a foam of pimento and coconut, fregola sarda, chipirones, and chorizo. He finishes his dishes with creative twists, great sauces and just the necessary seasoning. Like the main course with Pigeon d’anjou, a crisp of the pigeon gravy, a splendid Sauce bigarade, a cream of carrots and cauliflower. Guests have the choice between several tastings menus, from three up to seven courses, with or without wine pairings.
La Villa in the Sky offers a dizzying, wonderful culinary experience more than 120 metres up in the air. Amazing views on the city of Brussels accompany a meal, orchestrated by top chef Alexandre Dionisio, that focuses on the intrinsic flavours of the best parts of simple but extremely qualitative products.
