Madunia is a brand-new dining destination in Ibiza, which opened its doors on June 8th, 2024. Located on the island’s west coast in Cap Negret, this unique restaurant combines sun, sea, and culture in a setting that offers a deep connection to nature. Its hillside location provides stunning views of the bay and spectacular sunsets from its rooftop terrace, with the design harmoniously blending with the natural terrain to create intimate dining spaces on various levels.
Concept & Interior
The name “Madunia” is derived from “Mama Dunia,” meaning “Mother Earth,” reflecting the restaurant’s strong connection to nature. The team at Madunia draws inspiration from Ibiza’s diverse produce to create dishes and drinks that perfectly complement the restaurant’s setting.
Madunia’s hillside location in Cap Negret offers breathtaking views of the bay and sunsets from its rooftop terrace. The design seamlessly integrates with the natural terrain, creating intimate dining areas on different levels. The outdoor garden restaurant provides panoramic views of the surrounding bay, while the indoor venue features a rooftop terrace that serves as a sanctuary to witness Ibiza’s stunning sunsets.
The restaurant’s design is noteworthy for its seamless integration with the natural terrain. The architects have skillfully utilized the challenging hillside location to create intimate dining areas on different levels, preserving the breathtaking views. From the composed color palette to the integration of artisan works, every element reflects a balance between luxury and nature. Organic shapes are used on the gently sloping plateau, making each level unique.
At the top of the hill, there is an impressive bar where guests can enjoy a waterfall and the sounds of a DJ. The middle level offers a view of the outdoor chef’s dressing table, allowing diners to watch the chefs at work. At the bottom of the hill, there is a beautifully landscaped vegetable and herb garden. The rooftop indoor restaurant with terrace features a warm interior with fine materials, providing a beautiful view of the bay even on rainy days.
Every space in Madunia has been given special attention, including the toilet area, which is crafted with earthy touches and running water reminiscent of the cenote IK KIL in Mexico.
The chef (from the opening year 2024)
Chef Ivan Arauz Beusink, who previously served as the kitchen chef at RIJKS in Amsterdam for 10 years and was part of the team at Bridges at the Grand Hotel in Amsterdam, leads Madunia’s culinary team. Both restaurants earned Michelin stars during his tenure. Together with his girlfriend Jessie Le Comte, he left RIJKS to embark on this new adventure. Jessie describes Ivan as an open chef with a lot of self-control who enjoys training young chefs. In Ibiza, Ivan assembled a team of local and international chefs, including many female chefs.
Gastronomy
Madunia’s Executive Chef, Ivan Arauz Beusink, combines his Latin American roots with fine dining techniques to craft a sharing-style menu that complements Spanish dining culture. The menu showcases local produce with dishes like gamba roja carpaccio, Spanish Wagyu short rib, and tamales with cochinita pibil. Bold, open-fire dishes cooked on a Josper grill are a highlight, accompanied by local wines and cocktails. The restaurant is committed to sourcing ingredients sustainably, working closely with local fishermen, butchers, and farmer cooperatives. Madunia aims to celebrate Ibiza’s flavors and biodiversity in a beautiful, unconventional venue.
