Head Chef Shinji Kanesaka belongs to the rare kind of sushi chefs who offer the very best available anywhere and that in the city of Tokyo with thousands of ultra skilled sushi chefs. Shinji Kanesaka is one of the best sushi chefs on the planet, indeed.
Sushi Kanesaka is located in the basement floor of a building in Ginza and it is difficult to find, as you get accustomed to, when you try to find any of Tokyo’s über sushiyas. Only 14 guests can be seated at the same time at Sushi Kanesaka, which is more informal than the strictest restaurants such as Sushi Mizutani. The reason for that is probably that Kanesaka-san is born in the seventies so he is surprisingly young.
Sushi Kanesaka serves only traditional sushi, omakase, and the Head Chef decides what you will have. Shinji Kanesaka and his team of younger sushi chef apprentices seem to be able to read minds because whatever they serve and in its exact order it always feels and tastes perfect. There are not many who have the absolute skill to combine perfect textures, temperatures and flavours into some of the best sushi served anywhere.
After you have been in Japan for a while you start to learn that chutoro and otoro is tuna and that ika is squid etcetera and after a while you really feel accustomed to the Japanese way of making their traditional delicacies. The Japanese, and who does not, love their seafood, so hopefully will there be order again with sustainable fishing without having to remove all great that is sushi.
Shinji Kanesaka makes some of the best within its discipline and it is a great pleasure to be one of the 14 lucky guests to sit around the beautiful wood counter at Sushi Kanesaka watching the master chef handing out his magic.
