Sushi Shin – World Class Sushi
Niseko is a small village famous for having some of the best powder snow in the world for skiing. It is situated on Hokkaido, which is the north island of Japan. The best food in Hokkaido can be found in Sapporo city where they even have a three star Michelin sushi place, Sushi Miyakawa. In 2017 Masaki Miyakawa opened his second sushi restaurant and this time in Niseko. So with the opening of Sushi Shin it is possible in Niseko to enjoy both world class powder and sushi. Masaki Miyakawa who grew up in Hokkaido has a background from working at several three star places and achieved his first own three star in 2013 when he was running the sushi counter at Sushi Shikon in Hong Kong.
The counter at Sushi Shin is run by two of Masakis protégés, head chef Hironori Satake and chef Kazuo Ogura. They serve the same menu as Sushi Miyakawa which is edomae-style sushi with the finest seasonal produce with a focus on Hokkaido. Expect an array of small dishes, followed by some sashimi and then some world class nigiri. Satake-san techniques include ageing fish (sometimes for up to two weeks) and other methods including marinating or straw smoking.
Recommended is to get the counter seat with a maximum of eight where you see the chefs hone their knife skills and prepare dishes. Then you can see how their delicious abalone dish is done where flesh and liver are prepared separately and then brought together in a wonderful dish. If you sit at the counter you will also enjoy the wonderful hinoki wood counter with maple-leaf-shaped inserts in dark kurogaki persimmon.
There is an omakase menu and for lunch also a smaller nigiri menu. To match the sushi there is a great selection of sake but also wine and beer. What is great with Sushi Shin is that you can book online, often booking high-end places in Japan directly is difficult so this is much appreciated.
If you want to enjoy world class powder skiing in the day but also some incredible sushi then Niseko is probably the only place there is in the world!
