L'Amphitryon – air, earth and fire
The owners of L'Amphitryon have created their restaurant with the three elements air, earth and fire in mind. The elements work perfect to describe this restaurant named after a Greek mythological character who was the son of Alcaeus, King of Tyrins.
You will find L'Amphitryon in the suburb Colomiers just outside Toulouse. The suburb is famous for the aeronautics industry and Airbus which assembles the mighty A380 just a few hundred metres from the restaurant. The restaurant is owned and managed by Restaurant Director Sandrine Batard and Chef Patron Yannick Delpech.
Chef Delpech was born into a family of winemakers and his mother was a cook so the interest for cooking arrived with the breast milk. Yannick’s interest in baking led to an apprenticeship for one of the most distinguished chocolatiers of France – Michael Belin in Albi. It was a natural step for Delpech to become the Pastry Chef of L'Amphitryon in 1997 after his time with Belin. In 1999 young Yannick moved on and became the Head Chef of L'Amphitryon, and in 2004 he became the Chef Patron.
The French contemporary cuisine of L'Amphitryon offers a great balance of the flavours and Delpech’s creations can easily be tracked to his pastry roots, but most of all they are a tribute to the region. Head Sommelier Eric Bladou’s wine pairings are spot-on with the Chef’s cuisine. Pairings with local wines are recommended.
The menu is changed on a seasonal basis, but if you find any John Dory tartare with apple three ways or pork belly with apple you should order them. L'Amphitryon’s dishes are fresh and offer both strength and softness which results in a harmony for your taste buds.
L'Amphitryon is an obvious choice for everyone in the Toulouse region.
