There are chefs who take the broad path in just doing the same as most others over and over again and then there are the culinary masters who push the boundaries of what has been done, reinvent and create a cuisine which will move all our senses.
Chef Patron Heinz Reitbauer has his own culinary identity and philosophy which he has developed for many years. A personal style which is based on traditional cooking, but which has evolved into something unique. Chef Reitbauer’s cuisine has a foundation on the Austrian cuisine, and you can still order several classic dishes like the delicious Wiener schnitzel, but he has developed his cooking into a modern style you can not find anywhere else. Heinz moves perfectly between hi-tech and traditional techniques without any compromises, his progressive and intelligent vision of how it is possible to cook has taken him to the absolute top of the gastronomic world.
A lot of the ingredients are coming from Reitbauer’s own farm, and most of what is served comes from Austria. All your dishes are presented to you on small cards placed on your table at each serving. The cards are informative and a nice way to introduce everyone to Steirereck’s wonderful culinary universe. There are so many amazing recipes created by Heinz Reitbauer, but some of our favourites are the lightly smoked and pan-fried veal’s liver with liquorice, grapes and radish, the char with beeswax, yellow carrot, “pollen” and sour cream, and the tree spinach with baby white radish and bone marrow. These are just three of the masterpieces from the contemporary menu.
Steirereck was originally opened in Vienna by Heinz Reitbauer’s parents in 1970. The name of the restaurant is based upon the first location in a street corner and the parents origin from Styria. Today’s location of the restaurant is in the centrally located Stadtpark and is the perfect setting for a restaurant of this calibre. The restaurant breathes luxury, but the style manages to be inviting and ambient without never being too much.
Heinz Reitbauer is the best possible ambassador of Austrian cooking, since you can have the best of both traditional and new, even if you should come to this restaurant to enjoy the contemporary cuisine which is unique. His strong national identity and dedicated use of the foremost ingredients combined with amazing creativity and a warm-hearted flawless service makes Steirereck a must reservation.
