Pied à Terre – chef changes
Aussie Shane Osborn managed to regain the top ratings after Tom Aikens had left Pied à Terre, but now Shane Osborn has left the restaurant as well and in comes the former Sous Chef Marcus Eaves as the new Head Chef. Is the new Head Chef up to the job?
Shane Osborn left Pied à Terre for travelling in May 2011 so time will tell if Head Chef Marcus will do any radical changes in the cuisine, but all points that it will be business as usual, with the contemporary French cuisine that has been served in the restaurant since its opening 1991, and David Moore is still the main owner. In addition Marcus Eaves and the Restaurant Manager & Head Sommelier Mathieu Germond are also partners of Pied à Terre together with some others as well. David Moore has always been skilled at finding new talents and it is clever to let the key staff become partners. The same concept is used by David Moore at his sister restaurant L’Autre Pied as well.
French contemporary is mainly what you will find on your plates, like the delicious seared foie gras studded with smoked eel, fig purée, crushed honeycomb and banyuls glaze and interestingly wine paired with 2009 Muscat-Furmint, Versus n3, Tokaj Macik Winery from Slovakia that works well. Mathieu Germond’s wine pairings are in most cases impeccable like the Austrian 2010 Grüner Veltliner, Hasel, B.Eichinger, Kamptal to the roasted langoustine with suckling pig belly, lightly spiced consommé and dill flower.
The small and narrow dining room has been a classic for fine dining in London for over two decades and even if it has been renovated after a severe fire it is still the same cosy and loud atmosphere in it that is perfect for private company, but does not work for business. Luckily the private room upstairs is more than enough for privacy.
There are some misses here and there when it comes to the texture and flavours that must be worked on for a higher score at wbpstars.com, but the general positive impression is still the same as it has been for a long time so business will probably keep on at Pied à Terre for a very long time to come.
