He gained experience at restaurant Ron Blaauw, where he learned the art of fine dining. In 2007, the chef opened restaurant Aan De Poel together with co-owner Robbert Veuger. Robbert is responsible for the wines and serves the guests in a loose, casual manner. He offers a broad selection of wines from all regions in the world.
Chef Patron Stefan van Sprang serves a seasonally inspired menu that changes every three weeks. The chef’s menu includes six courses but guests can also choose à la carte. A business lunch formula is also available. Chef Patron Stefan van Sprang serves dishes full of flavour, based on his favourite products such as langoustine and foie gras.
A starter with langoustine comes with a cooked langoustine, raw marinated langoustine with pepper mixture, mango, pecan nuts, and a sambal vinegar dressing. It is finished at the table with a magnolia sorbet. A beautifully balanced dish, bursting with flavour. Lobster is served with a curry sauce, mirin and macadamia nut. The nuts give this dish a beautiful texture and ones again, powerful flavours are what makes this a dish to remember. Before the desserts, the chef serves a foie preparation with yakitori sauce, pickled blackberries and smoked chocolate. A creative and delicious combination.
