Casadelmar is a small design hotel designed by Jean-François Bodin who has really made an outstanding performance in creating a gem in dark cedar and glass that impresses on everyone. Italian born Davide Bisetto has worked for several top restaurants in Germany, Italy and England before he was top awarded at Carpaccio which is one of the Royal Monceau’s restaurants in Paris. The Executive Chef brought all his Italian cooking skills with French cooking techniques from Paris to Porto-Vecchio and personalised it even more with Corsican influences as well.
No one will question Davide Bisetto’s passion and playful sense in his head strong cuisine, with influences like a favourite recipe from his mother, Mediterranean, which of course is the cuisine of the region. Chef Davide Bisetto has chosen to walk his own way, basing his cuisine on his favourite ingredients olive oil, parmesan, mustard, saffron and balsamic vinegar. The food is healthy and light and makes a direct impression on you that lasts.
