CasCades Restaurant is the beating heart of the Viceroy Bali hotel. In the kitchen, executive chef Miles Belfield is responsible for the food. He offers casual and more fine dining dishes, based on Balinese creations and classic modern dishes. Sourcing most produce from our own greenhouse and local organic farmers, the dishes at CasCades burst with flavour and colour. Quality is the highest priority, with produce that can’t be found locally being sourced from other countries, such as premium New Zealand lamb and lobsters imported from Canada. It is also possible to order fresh lobster, served directly from the refrigerated aquarium in the restaurant.

The restaurant boasts one of Bali’s most impressive wine menus, offering a broad selection of European wines as well as new-world ones. The Viceroy’s general manager Anthony Syrowatka is responsible for the wine selection and also offers a pairing wine arrangement to complement the chef’s menus. The wine menu is structured according to the different grapes and offers bottles suiting a wide variety of tastes and budgets.
