Restaurateur Danny Meyer became well-known for his successful New York restaurants Gramercy Tavern and Union Square Café. Meyer also founded Eleven Madison Park back in 1998 and he hired Daniel Humm as the Head Chef in 2006. Danny Meyer and his business associates sold Eleven Madison Park to Daniel Humm and the restaurant’s General Manager Will Guidara in the fall of 2011.
Daniel Humm was born in 1976 in Strengelbach, Switzerland, and grew up not far from Zürich. His culinary career started with an apprenticeship when he was 14 years old and he soon had a position in Zürich’s five star hotel Baur au Lac. Chef Humm also worked a period for Le Pont de Brent in Switzerland. Daniel Humm was only 25 years old when he was the Executive Chef at Gasthaus zum Gupf in the Swiss Alps, but he did not stay long before he moved to San Francisco where he became the Executive Chef of the Campton Place Restaurant. Danny Meyer made Chef Daniel Humm an offer to start as the Head Chef of Eleven Madison Park and the rest is culinary history.
Chef Daniel Humm is the perfect owner of Eleven Madison Park together with the multi-talented General Manager Will Guidara who literally grew up in restaurants as a son of a restaurateur. Among other things, Guidara studied at culinary school in the north of Spain before he worked at restaurants such as Spago, Tribeca Grill, Tabla, and he also opened the restaurants at New York’s Museum of Modern Art. He became the General Manager of Eleven Madison Park the same year as Daniel Humm became the Chef, in 2006.
Together with the amazing team of skilled talents such as Chef de Cuisine James Kent, Pastry Chef Angela Pinkerton and Wine Director Dustin Wilson, Daniel and Will have a culinary dream team which will never stop to amaze you despite the fact that they have already won every accolade there is. Eleven Madison Park is still a restaurant under development and every visit to the restaurant lets you feel that there is more to come even if you are very satisfied with your meal. The talented team gives you the feeling of that there is more to come and you always return to the restaurant for more and that you will get – more and more of the best. Choose from a card of 16 ingredients from which the staff designs your meal. Forget about any fancy menu with brief novels as explanations of each dish. No, here you simply choose a word from the card such as “Lobster” and the restaurant will make you a dish of poached lobster with autumn mushrooms and spinach to mention one example. If you like to have fish you simply choose fish from the card and you can rest assured that you will have the best fish of the day cooked for you to perfection.
Eleven Madison Park is situated in the beautiful Metropolitan Life Building just next to Madison Park. You enter through a revolving door and are immediately struck by the impressive space in the main dining room with grand windows, vaulted ceiling and marble floors. The location is perfect for an über restaurant such as Eleven Madison Park.
