The 5-star Hotel Heritage in Bruges is a member of Relais & Châteaux, which brings together the most prestigious boutique hotels and gourmet restaurants in the world. The gourmet restaurant Le Mystique is located on the ground floor of the hotel. The former living rooms of the mansion have been transformed into a stylish and sophisticated restaurant. The high ceilings and doors combine classical elegance with a spacious and luxurious feeling. In addition, crystal flares, marble, curved parquet floors, mirrors with golden edges reaching to the ground, and linen tablecloths, complement the luxurious atmosphere. Head Chef Gregory Slembrouck is a chef with big potential. He has been trained by some of Bruges prominent chefs, like Patrick Devos and Kristof Marrannes from Ter Leepe. The refinement and creativity of this young chef his preparations are exceptional. The team offers a wide choice of traditional French and Belgian dishes, combined and modernized with influences from all over the world.
King crab is prepared in two servings. First as a salad with raw oyster, king crab, potato and cream of peas and mint. The second serving is warm and comes with baked king crab, zucchini, preparations of butternut and a sauce of shellfish and verbena. As a main course, locally sourced veal is prepared in the Josper and served with Lardo di Collonnata, celeriac, polenta croquet, shaved black truffle and pickled onion. Whatever the team turns on the plate, everything is expertly and elegantly presented. A good example is the dessert based on Jivara 40% milk chocolate, completed with a selection of forest fruits, a sorbet of dark chocolate and ice cream of blackberries.
The service in the dining room, led by Cathy Verbeeke, is simply excellent. Cathy serves the guests with flair, a lot of professionalism, and she impresses the guests with her knowledge of the food and beverages.
La Mystique is a special gourmet temple where Head Chef Gregory Slembrouck and his young and driven team prepare delicious, refined and modern dishes in a very atmospheric, classical setting. A contrast that works and which creates an unforgettable dining experience in the centre of Bruges.
