Chef Patron Oliver Glowig combines several perfectly matched elements at his eponymous restaurant. His German origin has granted him a talent for precision, dedication and accuracy and all his time spent in Italy’s Campania in addition to being married to a Nepalese woman has given him experience and passion rarely anyone who is not an Italian possesses.
You will find Oliver Glowig in the heart of Rome inside the Aldrovandi Villa Borghese luxury hotel. Simply take the elevator one floor down and you will end up at Chef Glowig’s 60 seats restaurant heaven. We can highly recommend having your meal al fresco at the beautiful terrace, weather permitting. You will have an impeccable meal close to the hotel’s pool area and garden.
Chef Oliver offers a balanced mix of German precision and Italian produce in his cuisine mostly dominated by Mediterranean kitchen and most of all, influences from the Campania region. Glowig started his professional culinary career at German Chef Patron Otto Koch’s Le Gourmet in Munich. In 1995 he proceeded to Acquarello in Munich which gave him his first Italian cooking experiences. In addition he was trained by the Italian legendary Chef Gualtiero Marchesi as well. Oliver Glowig quickly became a recognised name in Germany for his Mediterranean cuisine. In 2001 he was given the opportunity to start up his own restaurant at Capri Palace Hotel & Spa where he founded L’Olivo which became an instant hit. He became famous at Capri and received accolades for being one of the best chefs in Campania. The success opened opportunities like the opening of his Montalcino restaurant, before he was given the chance of moving to Rome and become one of the city’s foremost restaurateurs.
Chef Glowig’s contemporary Mediterranean cuisine is often changed and depends heavily on the seasons so you can expect to have new dishes at every visit you pay. You can either choose à la carte or go for one of the two tasting menus named after the Chef’s daughters – Gloria and Aurora. Both menus offer contemporary light and fresh Italian fare at its best, but there is a varying amount of dishes in each menu.
Sous Chef Domenico Ivarone has worked with Chef Glowig since his time spent at Capri and they make out for a perfect team in the kitchen. Matteo Trolese is both the Restaurant Manager and the Sommelier so he will show you some genuine Italian hospitality.
Rome is one of the most fascinating and beautiful cities in the world and a meal at Oliver Glowig fulfils a perfect day in the Eternal City.
