Late 2010, Simon, Peter, Fredrik and Johan opened Volt. With a background from famous Swedish top restaurants they wanted to create their own place where they could develop their own ideas of dining on their own terms.
The restaurant is situated in the fancy central part of Stockholm called Östermalm, but it is not a fancy restaurant. There are no white tablecloths, no dressed up waiters to serve which would be more in tune with the area. The interior is minimal and monochrome, but comfortable with some simple contrast between material, form and colours. You could say the interior is reflective of the food.
The food is focused on natural mainly Swedish ingredients. The focus of a typical plate are few ingredients and colours and matching and contrasting flavours and textures. It is creative in its development and discovery of Scandinavian ingredients and tastes. Wine and drinks are organic and often biodynamic like the food. They work with small producers both for ingredients and wine and aim at creating a close relation with their growers and suppliers. This gives both the food and wine a clearer and closer identity. So expect to find Nordic produce in seasons, such as scallops, mackerel, asparagus, quince, chervil, pikeperch, elderflower, sorrel and rhubarbs.
The restaurant is owned and run by Johan Bengtsson, Fredrik Johansson and Peter Andersson. Simon Carlsson left the restaurant in 2014. They work there daily, with Fredrik and Peter running the kitchen and Johan the dining room. The menu is small and you can go à la carte or with the tasting menu, the focus are dishes in season.
The Nordic flavours are there and the prices are reasonable, so a visit to Volt is recommended for those who enjoy good food and a must for those who want to enjoy current Nordic fine dining.
