The team at Saison stretches themselves to the limit, to deliver you the best possible time spent either in their intimate dining room of just 18 seats or at the Chef’s counter. You can start your dinner alfresco style in a setting centred by a Molteni stove. Chef Patron Skenes bases most of his culinary philosophy upon open fire cooking perfectly mixed with modern techniques. The Chef’s cooking communicates directly with all your senses and offers both a back to basic touch with the open fire style, but at the same time you will experience a unique and daring style nowhere else to be found.
The menu is changed daily, and you can expect an American fare with lots of French and Japanese touches and techniques. The wood pigeon with outstanding poultry from Sonoma is a good example of exactly how incredibly talented Chef Skenes is. His way of moving effortlessly between seafood, poultry and meat is impressive and together with Mark, they are the perfect team. You will have daring combinations and beverage pairings where only the creativeness sets the limit. A foie gras dish with chocolate may be served in the middle of the tasting menu together with a German complex lager which sounds completely wrong, but makes it all right in the hands of Joshua and Mark. These two guys with the little extra so few others have on top of the mandatory talents and skills.
