Sea Grill is the restaurant of Chef Patron Yves Mattagne. The restaurant is conveniently located in the luxurious Radisson Blu Royal hotel in the centre of Brussels. Under Yves’ leadership Sea Grill has become one of the most acclaimed restaurants in Belgium, gaining several international awards and recognitions.
Sea Grill opened its doors in 1990 as the gastronomic flagship of the Radisson Blu Royal hotel. Chef Yves Mattagne and Restaurant Director Marc Meermans became responsible for the kitchen and the service. Together they created an amazing luxury restaurant, where the very best seafood and an intimate dining experience became the pillars of the success. Yves Mattagne and two partners took over the restaurant in 2010, which allowed Yves to create his ultimate life’s work.
Yves Mattagne is more than a chef: he is a true and driven entrepreneur who also owns a consultancy firm and catering company. His practical, yet charming approach is often used to start new hospitality projects all over the world. He is also a famous television chef in the French speaking part of Belgium and in France, and featured in shows like ‘Masterchef France’ and ‘La Grande Ballade’.
The interior of Sea Grill was fully renovated when Yves Mattagne took over the restaurant in 2010. It is spacious, luxurious and cosmopolitan. Different artworks from renowned artists draw attention and the warm colours of the walls, the fabrics and soft lighting complete the homely atmosphere. The difference is in the details and even the costumes of the staff are specially designed by Scabal. A lot of attention goes to comfort and space: there is place for about 70 diners but the restaurant can be divided into different rooms, each with its own identity. They offer lots of possibilities, from a private breakfast, a business lunch, to a luxurious dinner. Sea Grill also offers a nice bar and a separate smoking room.
The team at Sea Grill is very experienced and loyal to Yves Mattagne: Chef de Cuisine Frédéric Murati has been working for 18 years at the restaurant. In the kitchen he is assisted by Sous Chef Sébastien Ogier. Head Sommelier Olivier Van Herck earned several recognitions as a wine connoisseur and serves excellent wines with the dishes. The service is led in style by Restaurant Manager Fabrice D’Hulster and Premier Maître d’hôtel Philippe Epaillard.
Sea Grill restaurant has always specialised in fine and delicious seafood preparations. Yves Mattagne and his team cook with the finest ingredients available and top notch products such as caviar, lobster, crab and truffle are always on the menu. These are prepared in the best possible (often traditional) ways and complemented with rich, delicious sauces and exotic ingredients (like Kaffir lime, Ras el Hanout, Yuzu and Wakame). The dishes leave a great impression because of their pronounced flavour and perfect taste balance. One of the most famous dishes is the ‘Homard à la presse’, for which a special press from the silver brand Christofle is used (only five copies of this press exist). It is prepared at the table after the guests have chosen a fresh lobster from the lobster tank. Next to the à la carte dishes guests can choose between a lunch menu ‘Marée du jour’ and the two menu’s ‘Tradition et qualité’ and ‘Incontournable’. Some incredible dishes include the ‘Belgian caviar on raw langoustines with a light sour cream’ and the ‘Foie Gras from Lafitte, smoked eel, lacquered duck consommé, Yuzu Miso, and Wakamé.
Sea Grill is a very special restaurant located at a superb location in the centre of Europe.
