Restaurant Spetters is an atmospheric restaurant located at the marina of the fishing village of Breskens. The place is managed by Head Chef Laurent Smallegange and Restaurant Manager & Sommelier Wouter Denessen. In just a few years, the young and motivated duo managed to gain international recognition for their restaurant.
Guests will discover Spetters on the top floor of the premises where Laurent’s parents also manage two other restaurants: Gusto and De Kluiver. Restaurant Spetters became Laurent’s first restaurant and the gastronomic showpiece of the family.
The restaurant offers a modern interior that combines dark colours with wooden accents, subtle and warm lighting. There is also a cosy parlour where guests can start/end with their aperitif/digestif. The walls are decorated with pictures from the yacht harbour and the boats. A beautiful wine cabinet adorns the entrance of the restaurant. The views on the marina are a strong asset and some guests arrive by boat to have a great lunch or dinner at the restaurant. In summer, customers can enjoy their meal on the cosy outdoor terrace just next to the harbour (a separate menu is served here).
Head Chef Laurent Smallegange gained experience in some of the best restaurants of the Netherlands like Oud Sluis, De Librije and De Kromme Watergang. Laurent works with seasonal ingredients and prepares creative dishes with respect for the products. His style shows respect for the main product, the North Sea and the Zeeland polders, while contemporary techniques are used to improve the dishes. He likes to work with fish and shellfish and loves to combine fish with meat. Asian influences are another element that characterise his kitchen.
Dishes like the starter with foie gras, cocoa, beetroot and jelly plum sake Tsurruume Suppai show that the Chef knows how to combine (exotic) flavours into beautiful dishes with a great taste cohesion. A main course with veal sweetbreads, structures of pumpkin and carrot, kumquat and lapsong souchon excels in deep and powerful flavours and surprises with the ingredient choices. Creativity is another asset of the young chef: the dessert ‘Autumn Leaves’ is beautifully presented and inspired by the famous millefeuille. It contains chocolate, yoghurt, peacan nuts crumble, lime and poudre d’or – and tastes as good as it looks.
Wouter Denessen welcomes guests in style, offers interesting wine pairing arrangements and prepares delicious cocktails. Wouter previously worked in De Librije for five years and received several awards and recognitions for his work. Make sure you try one of the local wines, the great sake selection, or one of the delicious cocktails like the gin with basil.
