Restaurant Voltaire is an intimate fine dining restaurant housed in the charming Parc Broekhuizen castle. Parc Broekhuizen Boutique Hotel offers a very special combination by merging history and authentic components with contemporary design elements. During the full renovation, contemporary touches and modern art, were added to strengthen the splendour of the past. The beautiful and calming atmosphere in combination with magnificent views of the surrounding parkland in the middle of the ‘Utrechtse Heuvelrug’ is unique. The setting amidst the large area of the century old forest, offers every opportunity for walking, hiking, biking as well as playing golf on the nearby 27-hole Golf Course. The prestigious castle ‘Parc Broekhuizen’, was voted The Best Design Hotel Europe in 2017.
Concept & Interior
Housed in the historic main building of Boutique Hotel Parc Broekhuizen on the ground floor, Voltaire’s interior offers a cocktail of modern design and references to bygone times. The restaurant is named after the French philosopher whose pictures of his plays by painter Laquy can be found on murals in the manor. Voltaire restaurant offers modern world cuisine in a luxurious but casual setting. There is an amazing terrace overlooking the great pond.
The Chefs
Thomas Diepersloot and Robert Poel are the two talented chefs while consulting chef Jacob Jan Boerma (previous 3* & 19,5/20 De Leest) assists. This impressive team serves seasonal dishes from the open kitchen, with a particular emphasis on vegetables, fresh flavours, and surprising herbs and spices that often come from the own gardens around the castle. They create picturesque plates that match the focus on modern art with always the main product playing a centre role. Local ingredients are complemented by International seasonings in order to create full and intense flavours. Thomas worked before in restaurant Het Gebaar from famous pastry chef Roger van Damme and also in De Leest with mentor Jacob Jan Boerma. Robert is a disciple of chef Jacob Jan Boerma from a young age. Restaurant Voltaire, which currently has a Michelin star, has been one of the consulting projects of Jacob Jan Boerma. He is nationally and internationally involved in a large number of culinary events, restaurants and concepts.
Gastronomy
Intense passion for the right product in the right combination is what drives the impressive team of Voltaire. With Voltaire they created together a successful interpretation of ‘De Leest cuisine’ while using many local produce with special acids, finding balance in all ingredients and building courses with light structures.
At Voltaire you can enjoy the 6 course Chefs Menu but also opt for à la carte lunch or dinner. Delicious full flavour tomatoes are plated as an artwork and combined with burrata flan, lavas, oyster leaves and a mayonnaise of tomato. Cod, perfectly cooked, comes with cauliflower, vadouvan, Zeeland mussels, mussel jus and sea lavender. Brilliant in all its simplicity is the Wagyu no.5 with baba ganouche, chlorofyl and ponzu jus. A very tasteful and precise dish with pure and harmonious flavours. The wine list offers unique wine and food pairings. Wines throughout your experience are harmonised by Head sommelier Yvo Kwak and sommelier Nils Snitselaar.
