Located on the 27th floor of Dubai’s most iconic Burj Al Arab Hotel, restaurant Al Muntaha really lives up to its name, which means 'The Highest' in Arabic. We experienced that the culinary delights at this top floor, take dining to another level in Dubai. The Jumeirah Burj Al Arab is the epitome of luxury. The 321 m high building is an architectural marvel that has put Dubai on the world map. The all-suite hotel in the shape of a sail ship redefined all levels of luxury throughout the years. The recent upgrades in their gastronomic experiences have led into engaging new top chefs for restaurant Al Muntaha and Al Mahara.
Two express panoramic elevators, travelling six metres per second, transport guests to the restaurant ‘Al Muntaha’ and ‘Gold on 27 bar’. This trip comes with all the breath-taking panoramic views you’d expect. The vast slanted glass windows offer the perfect photo opportunity of the Arabian Gulf and splendid Dubai coastline. The restaurant’s interior is stylish with a carpet patron linked to the sea. The ceiling indicates that we are high in the sky. Comfortable dining chairs and cosy lightning offer guests the perfect setting for an exclusive dinner. After a visit at Restaurant Al Muntaha guests can visit the Gold on 27 bar with cocktail specialties or of course spend the night in one of the suites in the Burj Al Arab Hotel.
Head Chef Francky Semblat took over the kitchen last year and continued with the remarkable culinary evolution of the restaurant. Semblat was born in France and his culinary career started in Paris under the world-famous chef Joël Robuchon, who noticed his talent and asked him to work for the Robuchon brand at the Robuchon au Dome in Macau. This restaurant at the time became the first western restaurant in Hong Kong & Macau to be awarded three Michelin stars. From there Semblat became Executive Chef at L’Atelier de Joel Robuchon in Shangai, being rewarded with two Michelin stars. Today he is on top of the gastronomical revolution of the Jumeirah Burj Al Arab Hotel.
Semblat serves a modern French cuisine with attention and respect for the product. The chef is a master of flavours. His refined compositions create an incredibly tasty and perfect cuisine – delicate, intense and delicious at the same time. He is a master in understanding flavour and taste in order to create exquisite dishes. Using the very best products available and also respecting the produce while preparing and cooking the in the simplest but correct way, results in the best taste! Highlights of the menu include a starter that combines king crab with Amalfi lemon, caviar and yuzu sour cream. Or the green pea and mint velouté which brilliantly blends with the sweet onion emulsion. Main courses from the degustation menu impresses with a combination of white cod with miso, romanesco, broccolini and a delicious pepper sauce. A top-quality wagyu tenderloin comes with crispy soufflé potatoes, green asparagus and béarnaise variation.
