Estiatorio Milos Dubai is situated at the stunning Atlantis The Royal hotel in Dubai. And even though every part of this gigantic property is truly unique, we have to admit that Costas Spiliadis, mastermind behind the restaurant, and his team succeeded in securing the most spectacular location for the Dubai outlet of his restaurant, which earlier already appeared in other iconic cities such as New York, Miami, Las Vegas and London. Upon walking towards the restaurant, you immediately notice how huge this restaurant is. Once inside, it is hard not to get impressed by the six meter high ceilings, the Greek marble floors and the huge multi-level dining room where more than two hundred people can enjoy Spiliadis’ take on Hellenic food. For who dares to confront the Dubai heat, there is a huge terrace in front of the restaurant, which boasts incredible views over Palm Jumeirah, the Arabian Gulf and of course, the mind blowing Atlantis The Royal hotel.
Just in front, you also find the already famous Skyblaze Fountain of Atlantis The Royal were shows with water and fire take place several times per day. Even inside the restaurant, you can enjoy amazing views thanks to the floor to ceiling glass windows on both sides of the building. The design of the entire restaurant is modern and luxurious. At the back, there is a huge open kitchen, and just in front, you can find one of the highlights that you find in every Milos restaurant across the globe : the seafood market which displays all the fresh fish and seafood which is available for the day. And this also immediately discloses the concept of the restaurant. The hotel can be reached after a 35-minute drive from Dubai International Airport (DXB), a 40-minute drive from Al Maktoum International Airport (DWC), or a 1,5 hour drive from Abu Dhabi International Airport (AUH).
The Chef & the team
Mastermind behind Estiatorio Milos Dubai is Greek chef and culinary entrepreneur Costas Spiliadis. Spiliadis was born in Patras, a port city not far away from the ancient Greek village of Olympia. In 1966 he moved to New York, but that is not where the Milos empire would start. The first Estiatorio Milos was opened in Montreal in 1979. The restaurant quickly built a reputation based on the fact that they served dishes which were rather simple in execution, but that used fabulous products prepared with lots of respect. Thanks to the success of the restaurant, Spiliadis could start expanding. The second branch of Estiatorio Milos opened in New York in 1997. Of course, it could be expected that one day he would also bring his restaurant concept back to his home country. That happened in 2004, at the time the winter Olympics were held in Greece. Later the restaurant would also open in Las Vegas, Miami, London and a second location in New York. With the launch of Atlantis The Royal in 2023, now also a location was opened in Dubai. The kitchen team in the Dubai outlet is managed by Greek Chef Lymperopoulus.
In Estiatorio Milos Dubai it is all about sharing food. What appears on the table consists of the freshest, high-quality products that are prepared with a lot of respect for the original taste of the ingredients. Often they don’t use much more than some salt or olive oil to emphasize the natural taste and freshness of the products that are being used. And that those products are of the highest quality should not be doubted. Fresh seafood and fish is flown in from the Mediterranean and is presented on crushed ice in front of the kitchen. Guests can walk over, choose what they want to eat and then the food is prepared on the spot by the skilled kitchen team.
One of the dishes that should absolutely not be missed during a visit to Estiatorio Milos Dubai, is the Milos Special, which is some kind of a tower made of crispy fried zucchini and eggplant slices. They are extremely thinly sliced which makes the texture in the mouth unique. Together with the tzatziki and the saganaki cheese that come on the side, this is a truly memorable way to start your lunch or dinner and a good example of the perfected simplicity they apply in all their dishes in Estiatorio Milos Dubai. Another good example is the sea bass that we tried during our visit.
The fish, which is prepared under a salt crust, is brought to the table, still covered with the salt. After the salt crust is removed, they drizzle some olive oil over it, add some capers and serve it to the guest.

The service team clearly understands the vision of Costas Spiliadis very well. With their flawless service, which is elegant, classy, polite but not formal or stiff, they contribute perfectly to the feeling of warm hospitality that Spiliadis wants to create for his guests. You are sitting in a huge restaurant, together with more than two hundred other diners, but at no single moment you experience in the service or in the atmosphere that this restaurant is so huge. Greek hospitality at its very best.
