The restaurant’s interior was renovated some years ago and today it is contemporary, featuring minimalistic details that often refer to ‘Aqua’ (water). Several landscape photographs set the atmosphere and the modern, sleek interior forms the perfect setting for Executive Chef Sven Elverfeld’s avant-garde cuisine.
Executive Chef Sven Elverfeld is one of Germany’s most famous chefs. Sven gained experience in several German restaurants, before moving to the Ritz-Carlton in Dubai, where he worked for two years. He started cooking at Aqua at the Ritz-Carlton Wolfsburg in the golden year 2000, and moved the restaurant to the world’s culinary top in no time. Sven Elverfeld’s cuisine is filled with contrasts and surprises. The brilliant chef constantly deconstructs, reinvents and improves his cuisine, which is built with mainly European influences. Aqua’s cuisine is also influenced by both Sven’s childhood and his travels and different jobs abroad in countries such as Japan, United Arab Emirates and Greece. His inventive, yet relaxed and curious approach to cooking, results in a dinner experience that is a must for all food lovers. A delicious starter, both in terms of flavour as structure, is Sven’s interpretation of the Northern German sandwich “Stulle”, with raw beef & Büsum shrimps, remoulade, lemon & garden cress. One of the main courses is the pigeon breast “Jean Claude Miéral”, brilliantly combined with aubergine, avocado, soya, Pak Choi, roasted garlic & bergamot. The Champagne cream sorbet “Edition Ruinart Rosé” is one of the most famous sorbet preparations on offer. Dozens of bottles of champagne are used every week to prepare the dessert and it is indeed simply outstanding.

Everyone from Restaurant Manager Jimmy Ledemazel’s team makes sure every guest is treated like a royal and has a quality experience. Sommelier Marcel Runge worked in some top restaurants in Germany and his experience and passion is translated into excellent wine pairings.
