Restaurant 1789 is one of the gourmet restaurants at Traube Tonbach, an iconic mountain resort in the Black Forest. Location
Restaurant 1789 is one of the four restaurants of the famous Hotel Traube Tonbach in Germany. In the middle of the beautiful Black Forest, 4 km from Baiersbronn, this establishment combines top gastronomy, well-being and Swabian luxury. The national park is just a stone’s throw from the hotel and Tonbach is praised for its beautiful nature and fresh mountain air. The name of the restaurant 1789 comes from the history of the Traube Tonbach. In fact, the property dates back to 1789, when it was opened as an inn for thirsty forest workers. Today, however, you can expect some of the best cuisine in the world here. No less than 4 restaurants offer a variety of dishes, from Swabian cuisine to Michelin-starred cuisine. In 2020, part of the hotel was tragically devastated by a fire. The building that housed most of the restaurants burned down completely. The family immediately began rebuilding and the new restaurant area was opened in 2022.
Today, Restaurant 1789 is housed in this new building, in a cosy area right next to the kitchen. The dining room seats up to 30 guests. Lots of wood is combined with industrial-looking walls and floors, and cleverly placed works of art reference both the Asian influences and the Black Forest surroundings. The restaurant has been awarded 1 Michelin star since 2021 and is open to hotel and non-hotel guests.
The Chef & the team
In the kitchen, head chef Florian Stolte leads the team. Florian Stolte has been head chef at the Köhlerstube and its sister restaurant Bauernstube at Traube Tonbach since March 2012. When the fire broke out in 2020, Florian turned the drama into an opportunity and created two modern, timeless restaurants: Restaurant 1789, where he serves creative and innovative cuisine, and the all-day dining restaurant Schatzhauser, where he presents Swabian-Baden cuisine, dishes from around the world and fine steaks from the grill.The dishes are served by the dynamic and friendly service duo Fabian Clement and Anna Ueter. They make guests feel at home and serve the wines and dishes with a confident and friendly style. As modern as the cuisine is, as cosy is the ambience in restaurant 1789.
The talented chef Florian Stolte previously worked in the famous kitchens of the Vila Joya in Portugal and the three-star restaurant Schwarzwaldstube, which is also located in the Hotel Traube Tonbach. Together with his team, he serves refined creations based on the best seasonal ingredients and spiced up with flavours from the Asian continent.
Gastronomy
Seasonal, fine ingredients such as turbot, langoustines and wagyu form the basis of Florian’s cuisine. They are processed into modern fine dining preparations, which are sometimes presented in a very minimalist way, sometimes in a very sumptuous way. Two 6-course tasting menus are offered: one normal and one vegetarian.
A good example of Florian’s cuisine is the carpaccio of langoustine, served with imperial caviar, cucumber and a bonito vinaigrette. Wagyu is served with all attention to the delicate meat: only a minimalist side of green asparagus, radish, shiso and an Asiajus complete this main course.
