Chef de Cuisine Michele Dell’ Aquila has his origins in Bari which is located in the southern part of Italy, so it is no big surprise that his cooking mainly is based on this area’s cuisine he is coming from. You will always recognise the Italian traditional heritage in Chef Aquila’s cooking, but the presentations and preparations are contemporary, indeed. There is a finesse and flair to all his creations which you soon will crave more for. The Chef travelled and worked at several different places around the world before he ended up in Macau. Prior to Aurora, he was the Chef of Bulgari’s properties in Tokyo and at Bali.
Chef Aquila’s attention to his southern Italian heritage of slow cooking techniques is to be seen all over his menu and you can expect to have dishes like smoked Sicilian red prawn Carpaccio, Sicilian cantaloupe sorbet and fennel salad as a typical starter, and pan-roasted cod fish with Spanish prawns, cherry tomatoes, cannellini beans and taggiasca black olives as a main fish course. The roasted Guinea fowl stuffed with chestnut and lardo sinese, truffle sauce and marsala, porcini mushroom and potato is delicious and works sublime as the main course.
Head Sommelier Joe Yang has a lovely job taking care of a wine lounge with one of the largest wine collections in Macau. With more than 600 wines listed, you can rest assured having some of the best Italian wine selections available anywhere, but the French and Portuguese collections are just as impressive. The wines of Aurora are simply amazing and that alone makes it worth a visit to the restaurant.
