Restaurant Babel is located in the city centre of Budapest near the Inner-City Parish Church (Belvarosi Plebania Templom) and only a few minutes away from the Danube River. The restaurant is managed by the M15 group which holds, besides Babel, other creative hospitality concepts like ‘Kiosk’ and ‘Terasz’. Babel, Kiosk and Terasz are housed in the same beautiful and impressive former-Piarist building. The M15 group transformed it into a multifunctional space and a true metropolitan meeting hub where gastronomy and nightlife meet.
Restaurant Babel is the gastronomic restaurant of the group and focuses on Hungarian regional cuisine with a modern touch. It gets inspirations of local traditions but serves dishes that fit in today’s international expectations.
The interior is impressively elegant with blazing mood lighting, glass elements, warm colours and cosy music. All design elements are made by Hungarian designers, even the plates and glasses. Big and comfortable chairs and spacious round tables welcome the guests.
Head Chef Istvan Veres originates from Transylvania and gained experience at L’Arpège Paris, Patrick Guilbaud Dublin, L’Ortolan London and in restaurant Maze from Gordon Ramsay in London. His kitchen style focuses on regional cuisine and 75 percent of the raw ingredients come from Hungary. He keeps simplicity in his combinations and prepares original combinations that excel in flavour intensity.
In the four or six course tasting menu from the chef you will experience his way of Transylvanian innovation. Examples are his preparation of the traditional ‘Egg Galuska’: a base of Hungarian pasta with truffle and topped with egg foam. The dish is finished with dried and salted egg yolk and compressed salad. Lamb neck is served with mashed vegetables with whey, lavender, home-made cheese and a cracker of milk skin. Also in the desserts, the chef impresses, with clean and simple, yet original servings. His light ‘Snow White’ dish combines biscuit with rhubarb chutney, elderflower cream and tomato powder.
The wine list composed by sommelier Péter Blazsovsky features a unique selection of more than 140 Hungarian wines. He serves guests interesting and often surprising wine pairings.
