Restaurant Domestic is located in central Arhus the main city of Jutland, Denmark. Aarhus is the second largest city of Denmark and the largest city of Jutland. Guests will discvover Domestic in a former butchers’ shop. An excellent location for a creative dinner, indeed.
The main dining area seats around 35 guests and the interior consists out of mainly wood and original painted brick walls. There are two separate rooms for private diners and groups. They also have a wine cellar where guests can enjoy an aperitif or coffee after your meal. During the summer, you can enjoy dining outside in the terrace area.
Restaurant Domestic opened its doors in 2015 and got its first Michelin star in 2017. Since then the restaurant became very popular – and deservedly so. The restaurant was opened by four friends: two in the restaurant and two in the kitchen. Domestic serves strictly Danish produce, so you will not find any chocolate or foie gras here. They preserve a lot in the different seasons to be able to serve up an interesting menu all year round, as they strictly follow seasonal growth.
Christoffer Norton and Morten Frølich Rastad run the kitchen at Domestic. At their restaurant, they are very strict when it comes to using locally sourced and sustainable products for their dishes. They do a lot of preserving and fermentations, and stock up for winter when mother nature has less to offer here in Scandinavia. They even make their own take of chocolate in a dessert made from fermented and roasted pearl barley, as they would not consider using chocolate from anywhere else across the world. The sourcing of the products takes a lot of time but in the end, they are happy to be able to follow their philosophy.
There are two menus to choose from, a shorter version or the “real deal”. There are no a la carte options available. Example of dishes are: “Butter poached salted Hake with browned butter sauce and Jerusalem artichokes” or “Local pork, matured for 4 weeks served with oyster mushrooms and jus with pickled wild garlic” The presentation of the dishes is very simple and clean here.
Christian Neve and Ditte Susgaard are the other two owners and they run a service team of 5 people. Service in the restaurant is welcoming and relaxed. The waiters focus a lot on the beverages and the chefs are the ones presenting the food. It works really well and the humbleness of the staff is indeed very charming. They make their own non-alcoholic beverage on site. So if you are not drinking alcohol this is a very nice option. Wine pairings for the dishes are carefully selected and works very well with the dishes.
