Restaurant Edvard is the gastronomic restaurant of the prestigious five star Palais Hansen Kempinski hotel in Vienna. In the Palais Hansen Kempinski living history meets modern lifestyle. The name Edvard is a tribute to the famous architect of Palais Hansen – Theophil Edvard Hansen. The interior of the 40 seat-restaurant boosts the same atmosphere as the rest of the hotel. Historic elements and contemporary design fuses with a modern lifestyle. The spacious tables are covered with white tablecloths and elegant tableware. Tasteful stucco decorations, dark wooden floors and fresh shades of lime green and white reflect the cosy atmosphere. The restaurant is divided up into three different areas and offers a luxurious setting for a gourmet dinner.
Executive Chef Norman Etzold develops the cuisine of restaurant Edvard to a higher level and with each seasonal menu he reinvents the style of Edvard’s fresh cuisine. The young German chef started his career at the Hilton in Mainz and then moved to Kempinski Frankfurt and the restaurant Villa Rothschild. He gathered more experience in the Hyatt Regency Mainz and the Marsa Malaz Kempinski in Doha before moving to Vienna. Using seasonal products of supreme quality, perfectly combined and inspired by Mediterranean traditions, the creations at Edvard bring out the best possible taste of every product.
Examples from Executive Chef Norman Etzold’s cuisine are the oyster serving with Gillardeau oysters, cucumber, seaweed, wasabi and squid, which is combined with a mineral fresh white wine from Domain Ciringa Slovenia. A brilliant nebbiolo red wine from Piemonte Italy, the Nervi Valferana, is served with Danubia lamb with eggplant, baba ganouche, fermented garlic and polenta.
Restaurant manager Christiane Rückerl has already proved her expertise in houses such as the famous “Steirereck” in Vienna, and takes care of the professional and personal service. Sommelier Wolfgang Singer manages the wine pairing with the gourmet creations from the kitchen.
