Restaurant Inter Scaldes has been a landmark on the Dutch culinary map for many years now. The restaurant is the perfect enhancement to all finer things in life with a special emphasis on art and, of course, gastronomy. Chef Jannis Brevet and his wife Claudia are the managers and owners of Inter Scaldes and offer an experience that combines fine dining with a luxurious on-site hotel.
Inter Scaldes is located just outside the small town of Kruiningen at the countryside of the Dutch Zeeland in The Netherlands. The main restaurant building was built in 1927 by a veterinarian. He lived at the property until 1953. After that, the building was used to house the Royal Marechaussee until 1968, when it was turned into a restaurant by Chef Patron Maartje en Kees Boudeling. Inter Scaldes became a well-known restaurant and one of the most famous restaurants in The Netherlands. The accolades kept on coming and in 2001, the business was taken over by the present Chef Jannis Brevet and his wife Claudia.
Chef Brevet was born and raised in the Zeeland region and is extremely familiar with the many beautiful ingredients from both the neighbouring land and the sea. There are numerous amazing products from the region that the chef includes in his dishes, like the delicious blue lobster from the Oosterschelde, or the lamb from Zeeland. Following the start of Brevet’s gastronomic career in Zeeland, he moved on to an apprenticeship at the famous German restaurant Tantris in Münich. Jannis worked for several years in restaurants in Germany, like Schweizer Stuben in Wertheim-Bettingen and Le Marron in Bonn. It is in these restaurants that he learnt how important structure is in the kitchen as well as on the plates. The Chef moved back to The Netherlands and continued his successful career at Dutch restaurants like Chagall and ‘t Koetshuis, before he got married to Claudia and settled down at their Inter Scaldes. The couple slowly transformed Inter Scaldes from a great fine dining restaurant to a hospitality destination that attracts gourmet lovers from all over the world. In 2018, Inter Scaldes received its third Michelin star and a score of 19.50 points (out of 20) in the Dutch Gault&Millau guide.
The interior of Inter Scaldes restaurant, as well as the interior of the neighbouring Manoir hotel, is artistic, and offers a great mix between minimalistic, modern art and warm hospitality. Jannis Brevet is a renowned artist himself and many of his works can be discovered on the property. Guests can start their experience with an aperitif at the lounge, before heading to one of the tables in the bright dining room. On warmer days, the big terrace with beautiful views on the countryside is a great place to enjoy your lunch or dinner.
Jannis Brevet’s cooking is based on the French haute cuisine, but the Chef has developed his own style and uses a lot of products from the Zeeland region. Brevet has a precise and artistic style that derives from his experience in Germany. Luxurious products form the basis for many of his dishes. As an ambassador of Anna Dutch caviar, the chef serves several dishes that include royal portions of the black gold, such as the carpaccio from langoustines from Guilvinec, with Holstein and big dots of caviar. Another great starter combines duck liver with popcorn, passion fruit, old port wine and Parmigiano Reggiano cheese. As a main course, lamb from Zeeland is served in a herb crust, with delicate potato soufflés, and structures of onion, fennel and sea lavender.
The team surrounding Claudia and Jannis has the same devotion for hospitality as the owners. Sommelier Geert Rutten guides guests through the impressive wine list (with many amazing classical European bottles) and offers interesting wine arrangements, too. The service team is discrete and professional and makes sure the guests have nothing to worry about. To complete your Inter Scaldes experience, try to stay overnight in one of the beautiful suites on the premises.
