Restaurant Ocean is nestled within the grounds of Vila Vita Parc, one of Europe’s most prestigious beach resorts. Set along the dramatic Algarve coastline, the property spans 54 acres of subtropical gardens, where Moorish-inspired architecture blends harmoniously with modern design and a laid-back, bohemian-chic atmosphere. With six bars and eleven restaurants, Vila Vita Parc is a true gourmet destination, yet Ocean remains its undisputed crown jewel. The restaurant welcomes not only in-house guests but also visitors from outside the resort, making it a culinary landmark for the entire region.
Restaurant Ocean first opened its doors in 2007 and has, in less than two decades, established itself as a benchmark for refined Portuguese gastronomy. The concept is deeply tied to its location: a dining room designed to frame the infinite horizon of the Atlantic, the waters which have shaped Portugal’s identity for centuries. From the moment guests step inside, the sense of place is overwhelming: the ocean is both backdrop and protagonist.
Floor-to-ceiling glass walls flood the room with natural light and create a visual connection with the waves below. The décor is deliberately minimalist, with contemporary round lamps that float like circles above the tables and subtle maritime motifs that echo the surrounding landscape. Blue and ivory tones dominate, while soft curves in the furniture mirror the flow of the sea. Every detail has been chosen to amplify the experience of dining by the water. With only 35 seats, the space feels intimate, exclusive and personal, encouraging guests to surrender to the journey that awaits.
The Chef
At the heart of Ocean’s success is Executive Chef Hans Neuner, who has led the kitchen since 2007. Born in Austria, Neuner discovered his passion for cooking as a teenager and refined his craft in some of Europe’s most respected kitchens, including the Adlon Hotel in Berlin, Tristan in Mallorca, and Seven Seas in Hamburg. When he arrived in Portugal, he immersed himself in the country’s culinary traditions and native ingredients, uncovering a source of inspiration that would come to define his career.
Neuner’s cuisine is often described as light, precise, and narrative-driven. His menus are conceived as stories that unfold course by course, tracing Portugal’s maritime past and its cultural connections across the world. Over the past five years, he has crafted a series of menus inspired by Portuguese trade routes and exchanges, weaving in influences from Asia, Africa, and the Americas. Each dish is anchored in Portuguese heritage yet elevated by global nuance, creating food that feels both rooted and refreshingly original.
Another hallmark of Hans Neuner’s cuisine is his passion for presentation. At Ocean, this attention to detail goes beyond the kitchen into a dedicated “porcelain room”: an impressive space filled with plates, cutlery, and countless presentation pieces sourced from around the world. Each course is served on carefully chosen tableware that enhances the story of the dish, making the visual experience as striking as the flavours themselves. Guests can expect some of the most imaginative and beautiful presentations in Europe.
This culinary approach has earned Ocean international acclaim. The restaurant earned its first Michelin star in 2009, a second in 2011, and has maintained them ever since. In 2025, Ocean was further honoured when the Michelin Guide Portugal awarded the Best Service Award to restaurant manager Nelson Marreiros, whose dedication to hospitality matches Neuner’s devotion to gastronomy. The crowning achievement arrived that same year: the award of three Repsol Suns, the highest distinction of the Repsol Guide, cementing Ocean’s place among the very best dining destinations on the Iberian Peninsula.
Gastronomy
The heart of the Ocean experience is the tasting menu, currently (2025) titled Tastes of Discovery. Conceived as the culmination of a five-year culinary journey, it carries guests from the spice markets of India and Thailand to the volcanic landscapes of Hawaii, the fishing villages of Canada, and the tropical abundance of Brazil and Mozambique. “This menu is about embracing the world, understanding its flavours, and telling stories through food,” says Hans Neuner. “For us, travel is an endless source of inspiration, and this year’s menu reflects the excitement of discovery.”
The opening act, Codfish with Alentejo Citrus and Onion, immediately sets the tone with elegance and whimsy. Cod, a fish inseparable from Portugal’s culinary heritage, is reimagined as a crispy cube, lifted by the sharp brightness of Alentejo citrus and the earthy sweetness of onion. Its presentation is just as striking: served on a cloud alongside a delicate miniature hot-air balloon, it is a dish that announces both playfulness and precision from the very first bite.
The culinary journey at Ocean Restaurant continues with one of the evening’s standout creations: “Cenoura à la Algarvia”. Chef Hans Neuner transforms humble carrots into a dish of refined elegance, marrying their natural sweetness with the zesty brightness of orange and the warm, earthy undertones of cumin. A delicate XO sauce, infused with carrot and Tonburi, adds umami depth and a subtle crunch, creating layers of texture and flavor that linger on the palate.
Next, the spotlight turns to the local sea bass. The fish is enhanced by the aromatic presence of wild Algarve juniper, adding a piney freshness that perfectly complements the tender flesh. Pistachio and leek provide both creaminess and a hint of vegetal sweetness, while a generous dollop of Imperial Caviar introduces luxurious brininess.
The crescendo arrives with the Purple Curry with Duck, Raspberries, Beetroot, and Black Walnuts. Here, the kitc richness of Maison Burgaud duck is countered by the acidity of raspberries, the earthy depth of beetroot, and the bitter crunch of walnuts, all wrapped in the warm embrace of purple curry spice.
The journey concludes with petit fours that evoke childhood memories, playful yet meticulously crafted. Among them, the “Oceo” lollipop is a whimsical reinvention of the classic Oreo: a milky, sweet dipping sauce contrasts beautifully with the crunchy cookie crumble dip, inviting diners to a nostalgic, interactive finale that’s both comforting and indulgent.
Throughout the meal, there is a rhythm and flow that mirrors the tides outside the open window. The pacing is deliberate, allowing each course to resonate and every story to unfold. Dining at Ocean is not merely eating, it is embarking on a sensory expedition where Portugal’s culinary heritage is both anchor and compass.
Service And Wine
Under the guidance of restaurant manager Nelson Marreiros, who won the 2025 MICHELIN Service Award, the service is elevated to a perfectly orchestrated, discreet yet highly personalised experience. Marreiros’ team delivers hospitality that is warm yet unobtrusive, striking a perfect balance between precision and charm. His recognition with the Best Service Award at the Michelin Portugal 2025 Gala is no surprise — it reflects a philosophy of service that not only complements but amplifies the entire Ocean experience.
And then, there’s wine. Head Sommelier João Wiborg de Carvalho plays and impresses with one of Portugal’s most impressive wine collections: the more than 24,000 bottles stored in the resort’s renowned Cave de Vinhos. Guests may choose between two pairing options: a classic wine recommendation, showcasing a thoughtful selection of regional and international labels, or a premium pairing, which opens the door to some of the rarest and most prestigious wines in the world. Tip: ask if a premium Portuguese wine pairing is available as well—a wonderful journey through the country’s finest wines.
Highlights from the cellar include the legendary 2002 Dom Pérignon P2. Among the whites, standouts range from Portugal’s 2021 Sou, Alvarinho, Quinta de Santiago and 2021 CV Curriculum Vitae to international treasures like the 2016 Keller Morstein Riesling. Red wine lovers will find depth in labels such as 2020 Palácio dos Távoras Vinhas Velhas, Bastardo, 2016 Legado, or classics like 1999 Château Palmer and 2016 Vérité Le Désir. For the finale, Ocean’s cellar offers rarities such as the 2012 Quinta do Noval Vintage Port, the centenary 1911 José Maria da Fonseca Moscatel Roxo, and the legendary 1942 Château d’Yquem.
