Octopus is a fine dining establishment located in a town called Béziers in the Languedoc-Roussillon region in south France. It is not far away from the mighty Mediterranean so you will have some great local cuisine, together with influences as far away as Asia.
The story of Octopus started with three colleagues who worked at Hotel Le Bristol in Paris. They decided to move down south to Béziers to start up their own restaurant. Fabien Lefebvre is a recognised chef and has been awarded with the coveted Meilleur Ouvrier de France so he was the obvious choice as the Chef Patron. Chef Lefebvre’s wife, Rachel, is the Head Sommelier and Laurent Montillard is the Restaurant Manager. Together they created the Octopus restaurant back in January 2005. It did not take long for the restaurant to achieve widespread accolade and today it is a true gem which you should look out for while being in the region.
Octopus is located just ten kilometers from the Mediterranean which of course has influenced the cuisine of the restaurant, but the main foundation of the Chef’s cooking is traditional French cuisine. Mainly seafood is served even if you can order in a whole suckling pig, but you will also have a lot of vegetables and fruits on your plates. It is served to you as fresh as it can be, especially the vegetables which are always cooked last to achieve best possible freshness. Chef Lefebvre’s cooking is refined without making your experience a complicated one. You know what you have on your plate and your taste buds will be happy, indeed.
Fabien Lefebvre was only 16 years old when he started his gastronomic journey at cooking school. He has come a long way since then and has now achieved what most cooks only can dream about – his own successful restaurant. At Octopus, the Chef can live out his creativity and discover new culinary disciplines like the molecular cuisine without ever being stopped.
Octopus is far more than just squids on your plate, it is a restaurant for you to enjoy and experience without feeling obliged to dress up in a suit or being uncomfortable. You can simply relax and enjoy the ride.
